Piece of Cake Paleo series is an exploration of great breads that are grain-free and SO great and free-ing.
Youll be shocked at the utter righteousness that will be transcripted for your tasting pleasure. But, please, dont be a cave hoarder. Commune. Share this stuff with your neighbors. Break bread together. Put the kettle on and play some checkers on the front porch.
Get out the rocking chairs. Carve a pipe and grow tobacco in the back yard. Okaytoo far. Truth. But another truth is this - there are those that naysay Paleo and bread. The truth is - if Cavemen and women had access to the amenities of our time and abilities we possess - they wouldnt be extinct.
Thats not entirely fair, I know, because they live on through us, you and me. What Im really saying is - these are all grain-free, gluten-free, sugarless recipes that are concocted to make your cave a little swankier - that way if the original Paleos ever return via a hot springs time machine - well be ready to share what weve learned and grow together accordingly. Im ever so grateful that you have partaken of the continuation of our time together, baking up a brand new way to health and wellness. I guess, what Im saying, all tangential hogwash aside, is that Im happy to be in your kitchen again and for our shared creativity to be on your table, in your body, and thereby creating your world. It is an honor. It is a privilege.
It is now and now is what we have to work with - so lets get cooking! Some of you are now regulars in my hood. Or rather, youve made me a regular in your hood. And Im SO grateful for that choice. I LOVE cooking with you in your hood (thats urban speak for neighborhood, and I localized neighborhood to mean your kitchen). If youve returned, thank you dearly. For newbies to the Paleo Diet, sometimes monikered the Paleolithic Diet or the Hunter-Gatherer Diet it can mostly be thought of as this: Eat Plants, Animals, Nuts and Seeds.
Kind of in that order. The basic concept is that its a low to no-carb, high and lean natural proteins diet sprinkled with loads of good fats. Its also sufficient to say that the gist is eating whole, natural unprocessed foods while eliminating processed foods and grains. There, Ive said it again. Its better for you to eat well, like, caveman/woman well. Thanks for joining me in the continuation of this series in an easy to follow, sometimes entertaining, and altogether inspiring offering of Paleo-friendly and always sugarless and gluten-free (thats Celiac and Diabetic friendly) take on Bread Loaves.
What youll find in this book are several interesting and fascinating takes on bread loaves, from classics like Banana Bread, Potato Bread, and Lemon Poppy Seed Bread to innovational, yes I just said innovational, breads like Fig Flats, Cherokee Frybread (dangerous, huh?) and Green Tea Pistachio. So, as with last time, put on some jazz or an internet radio station of Paleolithic Era Big Bang Music and fire the hearth. OH! BUT ONE MORE THOUGHT! A simple SIDE NOTE on FLOURS:Widely Accepted Paleo Flours:COCONUT MEAL (FLOUR) or ALMOND MEAL (FLOUR)(I keep pretentiously quoting it because theyre grain-free)Others in the oft-debated category include but are not limited to:Amaranth, green vegetable seed ground up (this an acceptable flour)Buckwheat, a fruit flour (pseudo-cereal because of starch content)Arrowroot, an herb flour (like Buckwheat has a high starch content)Sorghum Flour, this is great for unleavened breads, but thats about it. These are all technically grain-free and some may be easier to find in your world than others. Please use your best judgment and listen first and foremost to your own knowledge of your body and what suits it best. Youll notice that I will call for Coconut or Almond in the recipes most often, but these others in a pinch are interchangeable if you can find them instead. The overall point is, I want to use all natural, unprocessed, grain-free and whole foods when we create these baked goods together.
I want you to feel better inside and out no matter how you slice it. Welcome to Middle Eastern Morning Bread. [Prep Time: 13 minutes / Cook Time: 30-40 minutes] Cardamom is a Middle Eastern spice. I use it a lot. Granted, I also speak a little Arabic and started as a Middle Eastern Relations major in college. But it was at these weekly exploratory potlucks that I first discovered cardamom was not a special kind of sweater. My reaction? I went on a cardamom binge.
Coffee, cakes, pies, egg scrambles (that one wasnt the best idea) - but the others were a ginormous hit. And truth-be-told, most people will never place it. Translation: its a great secret ingredient. Now we go to morning bread. Its the kind of bread you can write home about. Serves approximately 4-12 depending on how you slice it.
Preheat oven to 375 degrees. Lightly oil a loaf pan. You'll need the following ingredients: 4 eggs (Cage Free, like born free, not you liberated them from the carton) 2 teaspoon of Vanilla (All Natural) teaspoon of Sea Salt (we like it pink - it's higher in mineral content) cup Pistachio cup pitted and chopped Dates 2 teaspoons of Cardamom cup Virgin Coconut Oil (Melt that business) cup Raw Honey (local if possible) cup *Coconut Flour cup of Coconut or Almond Milk (Unsweetened) 1 teaspoons Baking Soda 1 cups of *Almond Flour 1 tablespoon of Apple Cider Vinegar (We Like it Organic and Raw) cup Flax Seed Meal After you've seen to it that you've weighed and measured, proceed to: Whisk dry ingredients together. Set aside. Then, whisk together the wet stuff. Mix the two.
Once well beaten, pour into a lightly oiled loaf pan. Bake for approximately 30-40 minutes on 375. Itll be golden brown and moist and awesome. Enjoy. Brew some Middle Eastern coffee (cardamom and honey and boil the coffee grounds until it reduces and seems thicker) and enjoy the pairing. *Remember that flours are often interchangeable - SEE PREFACE. Welcome to Cinnamon Streusel Bread. [Prep Time: 15 minutes / Cook Time: 30-40 minutes] I have untold dreams of ancient Bavaria and their cakes and biscuit and breads and creams.
This is my re-envisioning of those ancient days. I added cinnamon to the streusel because its an inhibitor of appetite and will keep me from eating all of this bread. Its an almost savory experience and you really taste the near eastern spice that probably wasnt in Bavaria. But the imagination has only the constraints we place on it. Feeds 8-12, maybe, depending on your slices. Preheat oven to 375 degrees.

You'll need these lovely items to make this adventure possible: cup Apple Butter cup melted Virgin Coconut Oil 3 tablespoons Sparkling Water (that means its naturally carbonated) 5 Eggs (Cage Free, like born free, not you liberated them from the carton) 2 tablespoons Maple Syrup (substitute Raw Honey or Raw Agave) 1 tablespoon Vanilla Extract teaspoon Sea Salt (we prefer Pink or Celtic) teaspoon Baking Soda 2 tablespoons Cinnamon 2 cups *Coconut Flour 2 teaspoons Raw Apple Cider Vinegar Streusel: cup Almond Meal Flour 1 teaspoon Ground Cinnamon 1 tablespoon Virgin Coconut Oil, melted After you've seen to it that you've weighed and measured, proceed to: Mix streusel ingredients together and set aside. Mix dry ingredients together first and dry whisk. Then mix all wet ingredients in a separate bowl. Combine the two with a wooden spoon into dough. Afterwards pour into loaf pan and sprinkle streusel topping over the top.
