Although the benefits of juicing have been known for most of the 20th century, the technology has not really been available to make the idea mainstream. Mayr himself obviously did not include juices in his dietary approachoriginally he advocated raw, unpasteurized milkbut here we have taken his principles and applied them to what can be achieved using modern technology. In Ayurvedic thinking everyone should have a liquid fast at least once a week. In that sense juicing is not new but thousands of years oldjust the technology makes it easier and more interesting.

Some fruits that may seem to be acidlime, lemon, grapefruitin fact have an alkalizing effect on the body. Strange but true. But also if you are going to include any acidic foods in your diet, then the start of the day is the best time. If you eat raw foods in the evening then they will ferment in the stomach overnight because the body just wont have the time to digest them overnight. Like you, your body sleeps too. Raw foods need to be eaten early in the day when your body is strong and has time to absorb their benefits.

I wanted to get involved with this book to highlight an important fact: we, as consumers, have the choice to vote with our wallets every time we go shopping. Most take less than a few minutes to make and can be enjoyed on the go, transported easily and, in many cases, stored in the fridge for up to twelve hours which means they are very convenient as a snack.

The Seven-Day Cleanse gives us a chance to reboot our systems and clear out the junk in our diets and our bodies. However, you dont need to cleanse for the whole seven days. One day a week, or a few consecutive days can be enough to get the vital, cleansing nutrition we need into our lives.

In my work as a health coach, recipe developer, and food writer I try to create a point of reference for healthy, nutritious, and easy-to-prepare meals.
