Thank you for teaching me that good ideas come from bad ones; that hacking, gluing, and mashing things together is just as tasty as something from scratch; and for showing me what it means to create in a collaborative culture. Like many of us, I learned at a young age that cookies are special. They are a comfort we can come back to again and again in our hectic lives. Whether playful or sophisticated, chewy or crunchy, they always bring me back to my childhood and the sheer joy of being allowed to reach into the cookie jar for a tasty reward.
Every time the heavenly aroma of a freshly baked batch of chocolate chip or oatmeal raisin cookies wafts through the air, Im transported back to the first time I made my own cookies. I was in the kitchen at a friends house, happily measuring out ingredients as instructed so that I could lick the spatula clean at the end. At the time, it was simply a fun activity to do on a playdate. It wasnt until I was old enough to follow a recipe on my own that I understood: Back then, I was learning to bake. Theres a French phrase, mise en place, that means everything in its place. When I was young and helping my friends mom bake chocolate chip cookies, I was learning how to lay things out and organize my ingredients.
Ive since come to realize that the success of a recipe almost always comes down to whether you are prepared. With the right preparation, the delightful and comforting treats in this book can be whipped up with no trouble at all. I learned the importance of mise en place in culinary school, but its a skill I use regularly in my home cooking and party planning. If everything is in place (which is usually what takes the most time!), then when guests arrive or the kids get home from school, theres not much left to do before everyone can enjoy the food youve prepared. Despite the seemingly rigid nature of measuring things out, this actually opens up more room for creativity. And cookie recipes function the same way.
Once all the basic ingredients are in place, your mind is free to think of what you can add, what you can change, and how you can make them yours. Baking is a science, and there is a formula to the ingredients you need to make a successful recipe. Once you have the basics down, you can swap out flavors, add nuts, change up the type of chocolate, dash in citrus, or top with sprinkles. Once you learn the basics, you can play. This book is a collection of 103 playful recipes that add to, change up, and make old recipes new and exciting, while maintaining what makes cookies classic. Why 103? When you come to our house for dinner or dessert, we want you to know you can always bring a friend, or two, or three.

Bar cookies, including brownies and blondies, are a beautiful hybrid between a cookie and a cake. Dense, chewy, and gooey, baked thick and sliced into squares or rectangles, bar cookies are one of my favorite desserts. This chapter is full of chocolate, sugar, caramel, peanut butter, and more. Whether youre making them to take on the road or to a bake sale, or to slice up and serve at home, bar cookies just cant be beat.

But who wants to wait a whole year to enjoy the melting together of crisp apples, cinnamon, brown sugar, and butter? With this recipe, you dont have to. I set out to create something that could mimic the experience of a classic apple pie but can be enjoyed on the weekday, in the morning, or for a late-night treat. INGREDIENTS 1 cup (2 sticks) unsalted butter, softened cup plus cup granulated sugar 1 tablespoon sour cream 1 large egg teaspoon kosher salt 2 cups all-purpose flour 3 Granny Smith apples, peeled, cored, and thinly sliced 1 teaspoons ground cinnamon teaspoon ground cardamom cup chopped walnuts 2 tablespoons light brown sugar Vanilla ice cream for serving DIRECTIONS 1. Preheat the oven to 350F. Lightly coat a 9 13-inch baking dish with cooking spray. 2.
In a large bowl, cream the unsalted butter and cup of the granulated sugar with a whisk. Beat in the sour cream, egg, and salt. Stir in the flour and mix until a soft dough forms. 3. Spread half the dough into the bottom of the prepared baking dish, pressing down lightly into an even layer. 4.
In another large bowl, combine the apples, cup granulated sugar, 1 teaspoon of the cinnamon, and the cardamom. 5.
