Its always reminded me of Marseille, thatother polyglot of a town. In Marseille, because it was such acentrally located trading port, theres the confluence of culturalinfluences that go back 3,000 yearsall surging together in thatremarkable city. Here in BA, the Romans never landed and theCarthaginians never tramped through on their elephants, but stillBA has an impressive mixture of cultural elements from France,Spain, Portugal, Italyeverywhere, really. These bedazzling influences have combined tocreate a vibrant dining scene that has become even more impressivein the last few years. Get ready for an onslaught of meat-baseddishes. Nobody handles meat the waythese guys do. (That reminds me of something Sarah Palin said: IfGod hadnt wanted us to eat animals, He wouldnt have made them outof meat.) So, between your tango lessons and visits towhat has to be one of the most interesting cemeteries in the world(the Recoleta), spend as much time as you can in the eateries ofBuenos Aires. They dont like togive out their addresses as a rule until you get a reservation fromthem. Try emailing first, then calling.
Much better if you getsomeone wbo speaks Spanish to do it for you. But these are greatspots and very much worth the effort.) Theeye drifts to the clear glass window that lets you look into thekitchen. Known as one of the top five restaurants in Buenos Airesand like most of the finer restaurants a reservation is a must. Themenu is in courses (last time I was there we had 16 courses allpaired with wine for less than $100) but they offer many deliciousdishes like White Salmon and Filet Mignon. Great selection ofwines.
If they are jammed (and they usually are), opt for the lessformal place across the street, Aramburu Bis, owned by thesame chef. They are very big on veggies here, so expect deliciousitems pulled from the farm they have outside the city where theygrow up to 25 varieties of tomatoes, ranging in color from brightyellow to deep luscious red.
A sample item: watermelon skin, slicedthin julienne style and then sauted in butter. Or chunks of lambtossed with tiny carrots and little eggplants. This will be one ofthe culinary highlights of your visit, because you never know whattheyll come up with next. Menu favorites include: Pastawith Butternut Squash and Rucola Salad with pear and bluecheese.
