Mash 1 peeled and seeded avocado with the juice of lemon. Serve on fresh bread or toast and with a boiled free-range egg and for a complete nutritious meal.

BROCCOLI AU GRATIN

Preheat the oven to 190C (375F). To make the white sauce, melt 2 tbsp butter in a non-stick saucepan over medium heat, then add 2 tbsp plain (all-purpose) flour and cook, whisking, for 1 minute until a roux forms. Gradually pour in 625 ml (21 fl oz/2 cups) milk and whisk vigorously until all the lumps have disappeared and the sauce has thickened. Season with sea salt and cracked black pepper to taste and set aside. Chop 1 head each of cauliflower and broccoli into florets. Peel and dice 1 small sweet potato. Steam the vegetables for 5 minutes or until soft when pierced with a fork. Place into a large baking dish and pour the white sauce over to cover. Sprinkle with 50 g (1 oz/ cup) grated cheese. Bake for 3035 minutes or until golden brown. Serve and enjoy immediately.

CHICKEN SOUP

Heat a non-stick saut pan over medium heat and add 1 tbsp olive oil or butter. Add 1 washed and chopped leek (pale part only) and cook, stirring occasionally, for 5 minutes until soft. Add 2 diced carrots, 2 diced celery sticks and 2 tsp chopped thyme. Cook for a further 3 minutes. Add 1 kg (2 lb 4 oz) chopped chicken thigh fillets and cook, stirring, for 5 minutes. Add 1.5 litres (52 fl oz/6 cups) water or chicken stock (homemade stock is best as its less salty, or use a reduced-salt one) and bring to a boil, then reduce the heat to a gentle simmer and cook for 11 hours. Alternatively you can transfer the mixture to a slow cooker after the stock has been added and cook for 4 hours on the fast setting or 68 hours on the slow setting. Remove the chicken from the soup and shred into small pieces. Return the chicken to the soup, stir through, then serve with bread and mashed pumpkin for dipping.
Try: You can use diced skinless chicken breast fillets instead of thighs; they dont take as long to cook, so reduce the simmering time to 30 minutes (or until the chicken is cooked through and the veggies are soft). I dont recommend using breast meat if youre cooking this in a slow cooker, though, as the meat tends to dry out.

SERVES: 1 BABY & FAMILY OF 4
Place 410 g (14 oz/2 cups) washed red lentils, 2 peeled and diced carrots, peeled and diced sweet potato, 80 g (2 oz/ cup) chopped pumpkin (squash), 1 peeled and chopped potato, 1.5 litres (52 fl oz/6 cups) water or chicken stock and bunch finely chopped coriander (cilantro) in a large saucepan. Bring to a boil over low heat and simmer for 15 minutes. If youd like a looser consistency for baby, stir through some more water to heat through, then serve with baked potatoes, pasta or naan bread, with natural yoghurt, more chopped fresh coriander and fresh lime or lemon alongside.
