The most enjoyable part of writing any book is thanking the people who helped make it possible. I wrote these words back in 1986 in one of my early books. They ring even truer today. Planet Barbecue! represents the enormous creativity and bone-crushing labor of an army of family, friends, colleagues, experts, and grill masters around the world. What follows is an attempt to thank the hundreds of people who have contributed to the effort, with apologies to any I may have inadvertently omitted.
Family and friends: First and foremost, my wife, Barbara, stoker of my fire, nurturer of my dreams, companion on my travels around Planet Barbecue, editor of all my writing, consigliari for all the challenges encountered on the barbecue trail, and wind beneath my wings. My byline appears on the cover; hers should be written on every page.
Our kids: Jake, a fine chef in his own right (several of his recipes are in the book), and Betsyand her husband Gabrielwho, smack in the middle of everything, delivered the most precious baby and future pit-mistress ever, our granddaughter Ella Francesca. Gabriel helped me communicate with Spanish-speaking grill masters around Planet Barbecue.
My assistant, Nancy Loseke, tested every recipe, proofread every page, deftly handled every emergency, and managed to keep me on point (as much as that is possible) through TV shows, book tours, product development, and a thousand other activities. No doubt she got way more than she signed up for; the grace with which she handles it all is a tribute to her, not me. Assisting Nancy with the recipe testing were the amazing Arthur A. J. Mindermann, Heidi Robb, Stephanie Leonard, and Heidi Toledo. Greer Flax and Bianca Rojas provided additional editorial help.
Workman Publishing: When you look back over your life, there are certain encounters that change the course of your destiny. Meeting my editor, Suzanne Rafer, tops my list. With friendship, enthusiasm, fidelity, and unimaginable conscientiousness, Suzanne has brought ten of my books to life. That an inchoate manuscript of more than 1,200 pages eventually became this book, and that everyone involved with Planet Barbecue! survived the arduous editorial process, bear witness to her reputation as the best in the business. Of course, we owe it all to our head honcho and publisher-in-chief, Peter Workman (and his wife, Carolan), who graced this and all of my books with characteristic intelligence, vision, and wit.

Penny de los Santos shot the Russian sequences and Nuts and Bolts photos; Anastasios Mentis photographed Greece. Philip Hoffhines worked wonders with Photoshop. A special thanks to Mic Garofolo at the Broadmoor. I shot many of the remaining photos, which may remind you why my day job is writer.
History: I was first made aware of the evolutionary consequences of using fire to cook meat by my anthropology professor-cousin, David Raichlen. He in turn introduced me to Dr. Richard Wrangham, whose Catching Fire: How Cooking Made Us Human belongs on the bookshelf of anyone interested in cooking and human history. Alain Turq shepherded me through the awe-inspiring Muse Nationale de lHomme Prhistorique, while Bernard Ginelli and Jacques Collina-Girard showed me how early man would have made fire.
Travel: The researching and writing of Planet Barbecue! took me to six continents and fifty-three of the sixty countries included. I could not have done it without the expert advice of Nikolai Baratov, Anya Von Bremzen, Anita Cotter, Marian Goldberg, Mark Miller, Debra Rainey, and Patricia Schultz.
