Spicy Thai Coconut Mango Sorbet
This is a traditional and one of the most popular Thai desserts, having texture in between an ice cream and sorbet. Serves: Time: 20 minutes + freezing time Ingredients:
- Mangoes (3 cups, peeled and diced)
- Coconut Milk (1 cups, full fat)
- Sugar (3/4 cup, granulated)
- Lime juice (1 tsp.)
- Salt (1/4 tsp.)
- Dried chilies (1/2 tsp., Thai, ground)
- Mint (4 leaves)
- Xanthan gum (1/8 tsp.)
Directions: 1. Combine your mint, lime juice and mangoes in a blender on high until smooth. 2.
Blend on low then slowly start to drizzle with chili powder, salt and sugar while blending. Allow to blend for another 45 seconds or until the sugar fully dissolves. 3. Next add your coconut milk and continue blending on low for another minute. 4. 5. 5.
Now, add in your xanthan gum (if using) then set to churn in an ice cream maker then return to an airtight container. Allow to set for at least 3 hours before serving. 6. Garnish with lime zest and serve. Enjoy!
Pumpkin Syrup
If you are looking for a delicious Thai dessert that is also simple to whip up then this recipe is just what you need. Serves: Time: 20 minutes Ingredients:
- Pumpkin (100g)
- Sugar (300g)
- Water (400ml)
- Sugar (tsp.)
Directions: 1.
Cut peeled pumpkin into small pieces. 2. Boil half of your water with sugar on high heat then add your pumpkin. 3. Cook for 10 minutes then reduce the heat and allow to simmer until the mixture thickens to coat the back of a spoon. 4.
Transfer your pumpkin pieces in a serving plate, top with syrup and enjoy.
Thai Pumpkin Custard
This is a traditional recipe containing innovative and delicious blend of coconut cream and pumpkin. Serves: Time: 2hrs. 35mins. Ingredients:
- Sugar ( cup)
- Pumpkin (1 small)
- Coconut cream (1 cup)
- Duck eggs (5)
Directions: 1. 2. 2.
Create a square cover using the top of the pumpkin. 3. Pour the coconut cream mixture into the craved pumpkin and allow to steam for 30 minutes. 4. Set to refrigerate for about 2 hours. 5.
Serve and enjoy.
Thai Papaya Pudding
This delicious Thai pudding is made with fresh papayas and creamy coconut milk. Serves: Time: 20mins. Ingredients:
- Ripe Papaya (2)
- Gelatin (1 packet)
- Hot water ( cup)
- White sugar (1/3 cup)
- Coconut milk (1 cup)
Directions: 1. Scoop out the pulp from papayas and blend in blender to make puree. 2.
Take a saucepan and heat water on a medium heat. 3. Remove from the heat and dissolve gelatin in it. 4. Stir in sugar and mix well. 5.
Now put coconut milk, puree and this sugar and gelatin mixture in blender and blend well. 6. Pour the mixture into small bowls and freeze for at least 4 hours. 7. Enjoy!
Candied Sweet Yams
These delicious candied yams Try this unique and delicious Thai dessert with natural gumminess of Sweet yams Serves: Time: 2hrs. 10mins.
Ingredients:
- Sweet yams (500g.)
- Sugar (300g.)
- Water (250ml)
Directions: 1. Take a saucepan and heat sugar in water for 10 minutes. 2. Peel and chop sweet yams into 5 cm pieces 3. Add sweet yams pieces into pans and boil. 4. 4.
Serve and enjoy.
Chocolate Dragon Fruit Mousse
This recipe is made from cardamom and dragon fruit to create a delicious marriage in a smooth mousse. Serves: Time: 65 minutes Ingredients:
- Dark chocolate pieces (1 1/3 cups)
- Coconut milk (1 can)
- Ripe dragon fruit (2)
- Egg (1)
- White sugar (2 tbsp.)
- Ground cardamom (1/8 tsp.)
- Salt (1 pinch)
Directions: 1. Blend dark chocolate pieces in blender. Now add eggs, dragon fruit, salt, sugar and cardamom. 2. 2.
Heat coconut milk in a skillet on medium heat and boil. 3. Pour this hot coconut milk into blender and blend for 1 minute. 4. Pour mousse mixture into small containers or bowls and allow to set for at least 4 hours. 5.
Serve chilled and enjoy.
