Directions
Set one slice of ham on the bottom of four baking cups. In a large bowl, whisk eggs with sour cream. Stir in green pepper, red pepper, and onion.
Pour the egg mixture into ham-lined baking cups. Top with Cheddar. Place cups into the fryer basket. Adjust the temperature to 320F and set the timer for 12 minutes or until the tops are browned. Serve warm.
Buffalo Egg Cups

Directions
In a large bowl, merge almond flour, Erythritol, flaxseed, baking powder, and cinnamon.
Stir in butter, banana extract, vanilla extract, and sour cream. Add eggs to the mixture and gently stir until fully combined. Stir in the walnuts.
Pour into 6" nonstick cake pan and place into the air fryer basket. Adjust the temperature to 300F and set the timer for 25 minutes.
Cake will be golden and a toothpick inserted in center will come out clean when fully cooked. Allow to fully cool to avoid crumbling.
