Ingredients:
- 3 cups dark rye flour
- 1 cup all-purpose flour
- 1/3 cup active sourdough starter
- 1 teaspoon salt
- 1 cup warm water
- 2 tablespoons olive oil
Instructions:
In the evening, add the flours into a bowl and mix, then add the starter, water, and oil to form the dough. Knead in the bowl for 3-4 minutes.
Turn the dough onto a lightly floured surface and shape into a ball.
After shaping, place the dough into a lightly greased bowl, cover and leave to rise at room temperature for 4 hours.
Line a banneton with a towel, heavily floured. Turn out the dough, shape it, and place it into the banneton (proofing basket).
Place the banneton into a bag and let rest for about 8 hours or overnight.
Preheat oven to 220oF for 30 minutes. Place the dough on a baking tray and bake for 30 minutes.
Let cool on a cooling rack completely before slicing.
2. Sourdough Banana Bread

Ingredients:
- 1/2 cup butter
- 1 cup sugar
- 2 cups white bread flour
- 1 cup active sourdough starter
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 teaspoon sea salt
- 2 medium bananas, mashed
- 1 egg
Instructions:
Mix the mashed bananas and sourdough starter. Whisk together the egg, butter, vanilla and sugar and pour in the starter-banana mixture.
In another separate bowl, add the baking soda, salt, and flour and combine them and then add it to the banana mixture and then mix until combined. Dont over-mix.
Grease a 9-by-5-inch bread pan and pour the batter inside.
Preheat the oven to 350F for 20 minutes.
Bake at 350oF for an hour or until you insert a toothpick into the center of the loaf and it comes out clean.
Let the loaf cool on a cooling rack before slicing.
3. Jalapeno and Cheddar Sourdough Bread

- 1 cups warm water
- 2 cups bread flour
- 1 cups all-purpose flour
- cup whole wheat flour

- 1 cup sharp cheddar cheese, shredded
- 1/4 cup minced chives
Instructions:
In a large mixing bowl, combine the sourdough starter and the water and mix well. Then add the whole wheat flour, all-purpose flour, and bread flour and salt to the same bowl, combine everything well until a chunky dough forms. Cover with plastic wrap and let it sit for 6-8 hours.
When you are ready to shape mix in cheese, jalapenos, and chives then shape into a round ball. Cover with plastic wrap and refrigerate overnight.
