1 tbsp. olive oil
4 lb. chuck pot roast
Salt and pepper to taste
1 cup beef broth
cup red wine
1 cup diced carrots
4 cubed potatoes
1 diced green bell pepper
1 cup diced onion
3 minced garlic cloves
tsp. rosemary
tsp. coriander

Directions:1. Preheat the oven to 300 degrees2. Add the olive oil to an oven-safe pot.3. Heat the oil stop top.4. Season the beef with salt and pepper.5. Brown the meat on all sides for 10 minutes.6. Transfer the beef to a platter.7. Pour the beef broth and wine into the pot.8. Add the peppers, onion and garlic to the pot and cook for5 minutes.9. Add the remaining ingredients and combine.10. Place the beef back into the pot and cover.11. Transfer the pot to the oven.12. Roast for 2 hours.13. Adjust the seasoning.

cup flour
tsp. garlic powder
1 tsp. rosemary
1 tsp. basil
Salt and pepper to taste
2 lbs. beef stew meat
2 tbsp. olive oil.
4 cups beef broth
cup red wine
1 diced onion
1 tbsp. Magi seasoning
lb. peeled small potatoes
4 sliced carrots
2 cups frozen peas

Directions:1. Combine the flour, rosemary, basil, salt and pepper in aplastic bag with the flour.2. Add the stew meat and shake to thoroughly coat.3. Heat the oil in a Dutch oven.4. Brown the meat on all sides for 8 minutes.

5. Pour in the broth and wine and stir.
6. Add the onion and Magi seasoning, cover and let simmerfor 1 hours.

7. Add the potatoes and continue to simmer for another hour.8. Toss in the carrots and peas and simmer for 15 moreminutes.9. Adjust seasoning and serve with good, crusty bread.

4 lb. beef short ribs
Salt and pepper to taste
tsp. thyme
cup butter
1 sliced onion
2 minced garlic cloves
1 cup sliced leeks
cup red wine
2 cups beef stock
2 tbsp. red wine vinegar
18 oz. can diced tomatoes
2 cups V8 juice
3 cups sliced mushrooms

Directions1. Preheat the oven to 350 degrees.2. Season the ribs with salt, pepper and thyme. Set aside.3. Melt the butter in a Dutch oven.4. Saut the onion, leek and garlic for 5 minutes.5. Use a tong and remove the onion, leek and garlic to aplatter.

6. Transfer the short ribs to the Dutch oven and brown 5 minutes each side.
7. Return the onion mixture to the Dutch oven.

8. Add the wine, red wine vinegar, beef stock, tomatoes andV8 Juice. Stir well.9. Cover the Dutch oven and heat the mixture stovetop untilthe liquid begins to simmer.10. Transfer the Dutch oven to the preheated oven and cook for 2 hours.11. Uncover the Dutch oven and add the mushrooms.12. Recover and cook for another hour.
