PREFACE: my green journey
I came to New York City from Norway eight years ago as a model. I walked the streets and catwalks of this big city, constantly being judged on my size, appearance, skin, hair, and overall look. Yet I didnt feel all that well on the inside. I was careful about what I ate, to a point of obsession, and exercised way too much. I knew that eating healthy was importantbut I was confused about what that really meant. I relied on caffeine and sugar to get me through the long days, and couldnt help but count the calories of everything I ingested. Not so fun!
I was a young girl, but I was not healthyyet there I was, supposedly a model and image of what was considered ideal. I just did not feel good about all of that. And so, I quit.
I went back to school to finish my undergrad degree in Media Science and finally freed myself from all the judging eyes of the fashion industry. And so a journey began to figure out who I was, what I liked, and what made me feel good. After depleting my body of all the nutrients it needed, it was time to rebuild and restore. Nutrient-dense foods like leafy greens became an important part of my diet, and I finally pinpointed a few food intolerances. At first my new lifestyle made me feel restricted and deprived, but with the help of a health coach I discovered many other healthy foods. It was like a whole new world opened up to mea delicious world filled with kale, green juices, and colorful smoothies.
Once I removed those damaging foods from my diet and forgot about dieting and restriction, I started feeling better. I gained back my energy, and then some, once I started including more nutrient-dense foods into my life. It turned out that my body had been worn down and depleted after all those years of modeling, traveling, and overworking. I felt incredibly empowered knowing that I could change the way I felt through what I ate. I had gained control of my wellness.
