His heart was pounding and his mind was racing as he continued to press forward. Amidst the noise around him, all he could hear came from within himself: that this was now or never. He had to give it his all to catch the 50 seconds Fignon had on him the 50 seconds where nothing else mattered.
Having worked so hard to make it back to the top of cycling after being taken out by a gunshot, Greg had to do it. It was the only way, and it was all down to now. His batteries were low, but he had to dig deep to find that last bit of power to finish what would be a historical time trial.
During the warm-up, he had doubted the possibility of making this happen. The tailwind was strong, but Greg had felt incredibly good. His mind was in the right place, so he pushed himself beyond his own limits for the whole 25 km.
As Greg crossed the finish line, his legs were screaming and so was the crowd. He knew he had just done the best time trial of his life, but nothing was settled yet as Fignon had yet to cross the finish line.
Time seemed to pass by in slow motion as the worlds eyes were fixed on Fignon, watching the title slip away from him 8 seconds too late. Completely shocked, Greg could not believe it. He had won the Tour at the very last stage, with the closest win ever made. Those 8 seconds were the 8 seconds of victory at the worlds most glorious cycling race: the Tour de France.
In 2015, my colleagues from Eurosport and I were at the Giro DItalia discussing our favorite country for racing, and to this day, my choice remains clear.
Winning the Tour de France had been my goal since I first knew of its existence. It has everything I love: mountains, cobblestones, the summer heat, and the excitement of millions of people lining the roads. The competition is at the highest level of the season, and all of the best riders are there.
Although France is also synonymous with great food, it was unfortunately not so for me when I was a cyclist competing in the Tour. It was very important to provide my body with what it needed to use for fuel, but there were times when I just had to hope that I would be getting enough calories from a tough steak and some overcooked pasta alone.
To that end, I always looked forward to racing in Italy. The food was so good that it made racing easier. There was so much pleasure at the dinner table at the end of a very long day, and it helped me be at my best for the next day.
These days, the top pro teams have professional chefs who travel with them, and I wish that I had been lucky enough to have raced in the Tour de France with a chef like Hannah Grant! Her food is the perfect fuel for anyone, world-class athlete or not; with a focus on actually providing the body with what it needs without forgetting about the pleasure of eating fresh and well-prepared meals in itself.
Healthy living is a crucial factor and foundation when pursuing any goal of any caliber, and I am a firm believer that the right nutrition can make you go further. It is a matter of fueling right and fueling smart, and that does not have to be boring.
Do what you love the most, and do it right.
Greg LeMond
Dear reader,
First of all, I would like to thank you for picking up this book: a book that is very dear to me and has been in the making for quite some time through some of my life-changing moments. Luckily, these moments have only served to make this book something I am very proud of and excited to share with you.
Over these past few years, I have had the pleasure of working with sports physiologist Dr. Stacy Sims, Ph.D. to create a handbook, guide, and true companion on how to eat throughout the year; for the times when you are training hard, recovering, or even traveling and eating becomes difficult. This book aims to give you all the tools you need to become the best-fueled, energy-packed, lean, happy and winning machine that you can be and a great cook too.
After all, eating right should not be a punishment!
The road to personal success in sports as well as everyday living starts with fueling right.
Just as a racecar engine needs the finest fuel to operate at top speed, so does your own engine your body. Nobody in their right mind would put dirty oil into their Formula 1 car if they were planning for victory, so why should you fill yourself up with junk food or quick-fix, fad-diet meals to fulfill your goals and dreams?
The human body can be trained to achieve incredible performances in running, biking, swimming, and so much more. However, it can never be done without the right focus and dedication combined with eating what is right for you and the physical shape you are in.
Whether your dream is to run 10 km in under an hour, ride in the La Marmotte, complete an Ironman triathlon, or even become a professional athlete one day, you can do anything you set your heart on with the right dietary habits, a healthy body, and effective training.
If you are just beginning to train, do bear in mind that even the best of the best the top athletes of the world were also beginners once, and everything started with a dream as well. With this book by your side, you will learn how to fuel right in every season throughout the year, and be at your best to achieve what you have always wanted to achieve.
