Fermentation: A Quick Guide
What is Fermentation?
Fermentation is the process by which carbohydrates like sugar are converted into alcohols or acids. This is the process used in producing different kinds of food such as wine, beer, cheese, yogurt, and lot more. Fermentation happens naturally to lots of food. There are also many people who intentionally use fermentation for a lot of different reasons.
Common Fermented Foods
1. Beer. Beer is the produced by dehydrating grains like wheat, barley or rye then turning them into a mash. The mash is then mixed with very hot water to begin fermentation. Once it is well soaked and treated, the liquid is transferred into a big container and yeast will be added. The yeast will convert the sugar into carbon dioxide and alcohol. This fermentation process will last for several weeks. After the process, the beer will be filtered and is ready to be consumed.
2. Wine. Grapes are crushed, thus releasing juices rich in sugar. The extracted juice will be given enough time to absorb the flavour and the color of the grapes skin. The grape juice will then be transferred to a different container, and then yeast will be added. The juice is then left to ferment for several weeks. A lot of wines are also left to aged for better taste.
3. Vegetables. Different kinds of vegetables such as cucumbers, radishes, and carrots can be pickled. This process is accomplished by allowing the vegetables to sit on a solution made by combining salt, water, and vinegar for several weeks. During the fermentation process, lactic acid is released from the vegetables that give them a distinct flavour.
How To Make Kimchi
One of Koreas most popular dishes is their fermented cabbage dish also known as Kimchi. It can be used as a soup and stew ingredient, as a relish, or as a side dish.
Ingredients
2 pounds Chinese cabbage
1 medium-sized carrot
6 scallions
1 cup shredded Korean radish
tablespoons minced garlic
tablespoons minced fresh ginger
cup Korean ground dried hot pepper (alternative: any mildly hot ground red pepper)
3 tablespoons brine shrimp sauce (alternative: anchovy fish sauce)
1 teaspoon sugar
4 tablespoons sea salt (separate 1 tablespoon)
6 cups water
Instructions
1. Gather all the containers and utensils that you need. Other than the ingredients, you will need basic utensils such as:
Knife
Large glass bowl
2 quarts glass jar
Freezer bag
2. Before preparing your Kimchi, wash your hands and all the containers and utensils you will be using. Hand washing is not just for sanitary purposes, it will also prevent mould from growing in your Kimchi.
3. Wash all the vegetables and prepare them for cutting.
Cut the carrot into French fries-like strips.
Cut the Chinese cabbage into 2 inches squares
Cut the scallions into 2 inches strips
4. Prepare your brine solution. Dissolve 3 tablespoons of sea salt in the water.
5. Prepare the cabbages. Put all the cabbages in a large bowl. Pour the brine solution all over it. Cover the bowl with a plate and let it stand for about 10 to 12 hours.
6. Drain the cabbages. Do not throw away the brine solution. Set it aside. Mix the prepared cabbages with all the remaining ingredients and 1 tablespoon of sea salt.
7. Put the mixture in a 2-quart glass jar. Pour some of the reserved brine solution over the mixture but do not let the solution reach the mouth of the jar. Leave at least 2 inches space. Put a freezer bag on the mouth of the jar and pour the remaining brine solution into the freezer bag. Seal the freezer bag.
8. Put the jar in a cool place. The temperature of the place should be lower than 68 degrees Fahrenheit. Let the jar stay there for about 4 to 6 days or until the Kimchi is as sour as you like it to be.
9. Remove the freezer bag and seal the jar tightly. Store the jar containing your prepared Kimchi in the refrigerator. You may keep it for several months.
Tips and Warnings in Making Kimchi
Do not use any plastic or metal utensils and jar containers in making your own Kimchi. Kimchi, during fermentation, releases probiotics that are highly reactive to plastic and metal, and these could potentially be toxic. Only use wooden utensils and glass containers in storing your Kimchi.
You can also use other ingredients (instead of the vegetables listed) such as turnips or peppers in making this recipe.
How to Make Wine
Many people have been making their own wine for years. Wine can be prepared by using different kinds of fruits. Grapes, however, is the most popular. After mixing all the ingredients together, you just need the wine to ferment and age before consuming it. The steps are all simple. However, the result is outstanding and you will be proud of yourself for making it.
Ingredients
14 to 16 cups of fruits of your choice
1 pack yeast
2 cups honey
Filtered water
Instructions
1. Gather all the containers and utensils that you need. Other than the ingredients, you will need some utensils to ensure that the wine will not be affected by any bacteria or bugs.
2 gallon glass jar
1 gallon carboy
Thin plastic tube for siphoning
Long handled spoon
Airlock
Clean wine bottles
Corks or screw caps for the wine bottles
2. Choose your fruits. You can make wine from just about any kind of fruit, but the best ones to use are those at the peak of their flavour and were not treated using any chemicals.
