Introduction
F ew summer pleasures rival cooking and eating outside. Whether youre just throwing together a simple burgers-and-hot-dogs backyard cookout, or planning a full-blown smoker session to prepare delectable brisket for twenty of your closest friends, youre part of an American tradition. Even the early colonists had the cookout bug, capturing wild pigs and slowly roasting the beasts on spits over pits filled with applewood coals.
Food cooked out in the open just tastes better. A quick-seared chicken breast beats an oven-broiled version hands-down. And a pork shoulder smoked to fall-apart perfection? Theres just no comparison with anything that comes out of a kitchen. The only way to make those outdoor flavors even better is to prepare the food in a cooker you crafted yourself. Sure, you could be like all the other people on your block and buy a nice shiny grill or plunk down a small fortune for the latest trendy smoker. But why? Why spend your hard-earned cash on something that is really quite simple to build? The truth is, constructing a grill, smoker, or even a true barbecue oven is a fairly basic DIY project. These structures are generally forgiving of small imperfections, and the use youll get out of a homemade smokehouse or brick pizza oven will more than repay you for the time and effort invested.
Outdoor cooking structures come in all sizes, shapes, materials, and capacities. Familiar with basic masonry techniques? How about building a brick barbecue shown , an ideal way to recycle a used container into a long-lasting cooker? And all that just scratches the surface. Leaf through this book and youll find instructions for cookout accessories, pizza ovens, complete outdoor kitchens, and more.
Of course, sometimes you want to cook on the go, putting together a delicious feast in the parking lot outside the biggest game of the year. Thats why BLACK+DECKER Custom Grills & Smokers also covers tailgating. That section includes intriguing and useful projects, from a smoker you can bring with you to the game shown that will keep your liquid refreshments perfectly chilled.
The truth is, if theres a way to cook something outdoors, youll find it in this book. Choose a project that suits your cookout style and preferences, plan for where youll put it, and then get to work. Summers not going to last forever, and you want to enjoy every last bite of it.

Size a simple smoker to accommodate what youre most likely to smoke. This barrel smoker allows for two briskets at a timemore than enough to feed a large crowd and have plenty of leftovers.
Put basic metalworking skills to work in crafting a simple backyard grill for easy and quick cookouts. A fundamental cookout unit like this takes very little time, expertise, or energy to throw together and it works just as well as a store-bought model would. The capacity is limited, but for modest cookouts, this will more than do the trick.
