For the first time, a comprehensive guide to the best barbecue places in Texas! Others have attempted it, but no one has met the exacting standards of the author and his fictional sidekick Willie Joe. Many of the most ballyhooed places failed to come up to the mark. All barbecue places had to stand up to the demanding ribbon, fork, and squeeze tests, without regard to atmosphere, nice owners, publicity, or closeness to Austin. Troxell persuaded dynasties to part with treasured recipes and secrets including sauces, mops, and rubs. No town or city escaped Troxells determined scrutiny. The author covered the territory in less than six months, sometimes testing as many as six places in a day. And he swears he still loves barbecue.
