Preface
The International Commission for Research into European Food History (ICREFH) was founded in 1989 with the aim of studying the history of food and nutrition since the late eighteenth century. Every two years the ICREFH organizes a symposium and publishes a book based on a selection of peer-reviewed papers. The 2005 ICREFH symposium took place at the Domne Dahlem, an open-air museum located in the outskirts of Berlin and in the grounds of a former estate property. The Domne Dahlem is a museum dedicated to the history of agriculture and food in Berlin and the region of Brandenburg and, as such, it was the perfect place to discuss the interrelationship between food and the growth of cities from the eighteenth century onwards.
