Major dietary changes like going grain-free are daunting and emotionally draining, plain and simple. Food is part of our culture, and when we cut something, we miss it. Starlene's method of transforming old favorite wheat-based recipes to coconut flour is the first and only resource of its kind that I've seen, and her tutorials gave me more confidence baking with coconut flour than I ever expected.

If you've been wondering how to use coconut flour to create delicious recipes, wonder no more! Starlene takes the mystery out of baking with this grain-free flour. She doesn't simply give you her recipes that workalthough she does share those, toomore importantly, she explains the properties of coconut flour (and why the same recipe will work perfectly one time and the next time it won't, even with the "same" coconut flour). She doesn't just give you this key info; she also actually walks you through converting grain-full recipes to grain-free recipes using coconut flour. She even includes a troubleshooting section in her book. Oh, and the Pumpkin Poppers from this cookbook are one of the most popular dessert recipes featured on my dessert site, allglutenfreedesserts.com, and you won't want to miss out on her Sandwich Bread recipe either!

Mastering the Art of Baking with Coconut Flour is more than a cookbook. This is a primer that will save you countless dollars in wasted ingredients. I wish I had this book when I first began baking with coconut flour, as I wasted many expensive ingredients because no one showed me the proper ways to use the product. Even though I have now been baking with coconut flour for years, this book has still been a go-to resource in my kitchen and Starlene's tips and tricks have allowed me to make better quality coconut flour baked goods than I ever expected. Highly recommended for novice and expert bakers alike.

P REFACE
When I started my health journey in December 2009, I really had no idea what I was doing. Having embraced the body acceptance movement and the "fluffier" me, I had no outward desire to lose weight (although secretly I was terrified of my size 20 body), but I did admit to needing relief from depression and anxiety. The Gut and Psychology Syndrome (GAPS) Diet by Dr. Natasha Campbell-McBride discussed a protocol designed to alleviate depression and anxiety by way of healing and sealing the gut. My other aches and pains I attributed to "getting old" (I was only 46) and had accepted my fate. I was ready to heal my gut dysbiosis, but once that was done I figured I would just go back to eating whatever I wanted.
After just thirteen days on GAPS, my plan turned upside down. Although I'd been diagnosed with plantar fasciitis, my feet stopped hurting and I was once again able to walk barefooted without hobbling about painfully. I could wear regular shoes without pain! Today I walk two to five miles daily with no discomfort other than some soreness on the 10,000-step days. The other major improvement was my back stopped hurting. For several years I had been unable to sleep more than seven hours without my back seizing up in painand I'm one of those people who needs a solid eight hours to function properly.
