Macarons have been around for several years, possibly even as far back as the middle ages. In France, one of the popular foodstuffs to serve is anything that is almond based, making macarons one of the most treasured snacks you can enjoy today. It wasnt until the early seventeenth century that macarons began appearing in many cookbooks. Macarons, creations of sweet almonds, sugar and egg whites, this is a type of food that has captured the imagination of millions, especially those who share a love of baking.

If you have always wanted to learn how to make macarons for yourself, then you have certainly come to the right place. Inside of this cookbook, you will not only learn how to make authentic French macarons completely from scratch, but you will have access to over 25 of the most delicious macaron recipes you will ever find.

So, lets stop wasting time and get to baking!

Birthday Cake Macarons

To kick things off we have a delicious macaron recipe that you can make in - photo 5

To kick things off, we have a delicious macaron recipe that you can make in time for someones birthday. Frosting spread in between, this is a sweet treat I know you will love.

Makes: 20 to 25 servings

Total Prep Time: 1 hour

Ingredients for the macaron shells:

  • 1 cup + 2 Tbsp. of almond flour
  • 3 egg whites
  • cup of white sugar
  • 1 cups of powdered sugar
  • 2 to 3 drops of pink food coloring
  • Rainbow sprinkles, for topping

Ingredients for the filling:

  • cup of butter, soft
  • 1 cup of powdered sugar
  • tsp. of whole milk
  • tsp. of pure vanilla
  • 2 Tbsp. of rainbow sprinkles

Directions:

1. Preheat the oven to 325 degrees.

2. Place a inch round tip onto a piping bag. Line a baking sheet with a sheet of parchment paper.

3. Prepare the macaron shells. In a bowl, add the almond flour and powdered sugar. Stir well until evenly mixed.

4. In a stand mixer, add in the egg whites. Beat with on the medium setting until peaks form on the surface. Add in the white sugar and continue to beat until the peaks become stiff. Add in the almond flour mix and stir well until evenly incorporated.

5. Pour 1/3 of the mix into the piping bag. Set the remaining batter aside.

6. Pipe 1 inch circles of the batter onto the baking sheet. Sprinkle the rainbow sprinkles over the top.

7. Set aside to rest for 35 to 45 minutes.

8. Place into the oven to bake for about 10-12 minutes or until set. Remove and set aside to cool completely.

9. Prepare the filling. In a stand mixer, add in the soft butter. Beat until smooth in consistency. Add in the powdered sugar, whole milk and pure vanilla. Continue to beat until fluffy in consistency. Add in the rainbow sprinkles and fold gently to incorporate.

10. Place the macaron shells onto a flat surface. Add a small dollop onto one half of the cookies. Place the remaining macarons over the top. Sandwich together and serve.

Raspberry and Chocolate Macarons

Make these delicious macarons just in time for Valentines Day. It is incredibly easy to make and makes for the perfect gift to give to that special someone in your life.

Makes: 30 servings

Total Prep Time: 1 hour and 45 minutes

Ingredients for the macarons:

  • 6 ounces of almonds, blanched
  • 1 cups of powdered sugar
  • 3 egg whites
  • tsp. of salt
  • 3 Tbsp. of white sugar
  • 2 to 3 drops of red food coloring

Ingredients for the ganache:

  • 3 ounces of bittersweet chocolate, chopped
  • 1/3 cup of heavy whipping cream
  • 1 Tbsp. of butter, soft
  • 1/16 tsp. of raspberry extract

Directions:

1. Line three baking sheets with sheets of parchment paper.

2. In a food processor, add in cup of the powdered sugar and blanched almonds. Pulse on the highest setting until ground in consistency. Add in the remaining 1 cup of powdered sugar. Pulse again to mix.

3. In a bowl, add in the egg whites and dash of salt. Beat using an electric mixer until peaks begin to form on the sugar. Add in the white sugar and drops of food coloring. Continue to beat until the peaks begin to turn glossy.

4. Transfer to a piping bag that has been fitted with a round tip.

5. Pipe 1 inch circles of the batter onto the baking sheets. Set aside to rest for 1 hour.

6. Preheat the oven to 300 degrees.

7. Place the macarons into the oven to bake for 20 to 25 minutes or until set. Remove and set aside to cool for 10 to 15 minutes.

8. Prepare the ganache. In a double boiler, melt the chopped bittersweet chocolate until smooth in consistency. Add in the soft butter, heavy whipping cream and raspberry extract. Beat well until fluffy in consistency. Remove from heat.
