Almond Lemon Cake with Fresh Raspberries
A light and delicious cake bursting with zesty lemon and fresh berry flavor. Perfect served with afternoon tea and coffee.

Ingredients:
Lemon Cake:
- cup whole milk
- 1 tsp vanilla essence
- 3 cups Bisquick
- cup salted butter (at room temperature)
- 1 tbsp fresh lemon peel (grated)
- cup granulated sugar
- 2 eggs
- 2 cups raspberries
Almond Topping:
- 2 tbsp salted butter (melted)
- cup Bisquick
- cup slivered almonds
- cup granulated sugar
Directions:
1. Preheat the main oven to 350 degrees F. Spritz a 9x13 baking pan with nonstick spray.
2. First, make the cake. Using an electric mixer, beat together the milk, vanilla, Bisquick, butter, lemon peel, sugar, and eggs for 2-3 minutes until well combined. Transfer the batter to the baking pan.
3. Scatter the raspberries evenly over the batter and gently press down into the batter using clean fingers.
4. Next, make the topping. Add the melted butter, Bisquick, almonds, and sugar to a medium bowl and mix well until combined. Sprinkle over the cake batter.
5. Place in the oven and bake for just over half an hour until cooked through.
6. Allow to cool completely before serving.
Brown Sugar Coconut Crumb Cake
This scrumptious cake, with its aromatic coconut flavor and pleasant sweetness, can be enjoyed at brunch, tea time or even after-dinner with a dollop of whip cream as a delicious dessert.

Ingredients:
- Butter and flour (for cake tin)
Cake:
- cup sugar
- 1 cups Bisquick
- cup whole milk
- 1 tsp vanilla essence
- 2 tbsp shortening
- 1 medium egg
Topping:
- cup brown sugar
- cup coconut flakes
- cup walnuts (chopped)
- 2 tbsp whole milk
- 3 tbsp salted butter (at room temperature)
Directions:
1. Preheat the main oven to 350 degrees F. Grease and flour an 8 square baking tin.
2. In a mixing bowl, beat the sugar, Bisquick, whole milk, vanilla, shortening, and egg until combined and lump-free, this may take 2-3 minutes.
3. Transfer the cake batter to the baking tin and place in the oven for just over half an hour. Set aside to cool a little.
4. Preheat your ovens broiler.
5. In a medium bowl, combine the topping ingredients (the sugar, coconut, walnuts, milk, and butter) and scatter over the warm cake.
6. Place under the broiler for 3-4 minutes until the topping is toasted and golden.
7. Serve warm.
