Introduction
Most people are under the impression that in order to make homemade pastries, you need to have some semblance of baking experience under your belt. That couldnt be any further from the case. In fact, as long as you have the proper tools and ingredients, anybody can prepare even the most complicated of pastry dishes given enough time. With the help of the Internet, making homemade pastries from scratch hasnt been any easier. That is what I am hoping to teach you throughout the pages of this cookbook. By the end of this cookbook, not only do I hope you have learned how to prepare some of the most traditional pastry recipes for your friends and family, but have the confidence to reach out of your comfort zone to prepare pastries you have never tried making before. So, lets stop wasting time and get to baking!
Banana and Quinoa Muffins
To kick things off, we have a delicious muffin recipe that you will want to make nearly every morning for breakfast.
Makes: 12 servings
Total Prep Time: 1 hour and 10 minutes
Ingredients:
- cup of white quinoa
- 1 tsp. of salt
- 1 cups of whole wheat flour
- 1 tsp. of bakers style baking powder
- 1 tsp. of powdered cinnamon
- 2 bananas
- cup of honey
- cup of light brown sugar
- 1 egg
- cup of extra virgin olive oil
- 1 tsp. of pure vanilla
- 1 cup of blueberries
- Raw sugar, for sprinkling
Directions:
- In a pot set over medium heat, fill with salted water. Allow to come to a boil. Add in the white quinoa. Cook for 10 to 12 minutes or until soft. Cover and continue to cook for an additional 5 minutes. Drain the excess water. Fluff with a fork. Set aside cup of the quinoa for topping.
- Preheat the oven to 375 degrees. Grease a muffin pan with cooking spray.
- In a bowl, add in the whole wheat flour, powdered cinnamon, 1 teaspoon of salt and baking powder. Stir well to mix.
- In a separate bowl, add in the bananas, honey and light brown sugar. Mash until smooth in consistency. Add in the egg, olive oil and pure vanilla. Continue to mash until smooth. Add into the flour mix. Stir well until incorporated.
- Add in the blueberries and 2 cups of the cooked quinoa. Stir well to incorporate.
- Pour into the muffin cups. Sprinkle the raw sugar and remaining quinoa over the top.
- Place into the oven to bake for 30 to 40 minutes or until baked through.
- Remove and set aside to cool for 10 minutes before serving.
Apple Coffee Cake
This is a great tasting pastry dish you can make for your next brunch. One bite and I guarantee your guests will be begging you for the recipe.
Makes: 12 servings
Total Prep Time: 1 hour and 50 minutes
Ingredients for the cake:
- 6 Tbsp. of butter, melted and extra if needed
- 1 ounce pack of dry yeast
- 2/3 cup of light brown sugar, evenly divided
- 1 egg
- 3 cups of all-purpose flour, evenly divided
- cup of sour cream
- 2 tsp. of orange zest
- 1/3 cup of orange juice
- 2 tsp. of bakers style baking powder
- 1 tsp. of salt
Ingredients for the streusel:
- cup of all-purpose flour
- cup of old fashioned oats
- 1/3 cup of light brown sugar
- 2 Tbsp. of white sugar
- 1 tsp. of powdered cinnamon
- Dash of salt
- 6 Tbsp. of butter, melted and cooled
- 2 pounds of apples, cored and thinly sliced
- 1 cups of powdered sugar
- 2 Tbsp. of orange juice
Directions:
- Grease a baking dish with butter.
- In a bowl of a stand mixer, add in the yeast, 2 tablespoons of brown sugar and cup of warm water. Stir to mix. Allow to rest for 5 minutes or until foamy. Add in the egg, light brown sugar and 2 cups of all-purpose flour. Stir well until a dough begins to form.
- Add in the sour cream, orange zest, orange juice, dash of salt and baking powder. Continue to mix until elastic. Add in 6 tablespoons of butter and continue to beat until a sticky dough forms.
- Cover and set aside to rest for 1 hour.
- Prepare the streusel. Preheat the oven to 350 degrees.
- In a food processor, add in the all-purpose flour, old fashioned oats, light brown sugar, white sugar, powdered cinnamon and dash of salt. Add in the butter. Pulse until crumbly in consistency.
- Spread the dough into a baking dish. Spread the apples over the top. Sprinkle the streusel over the apples.
- Place into the oven to bake for 35 to 45 minutes or until baked through. Remove and set aside to cool.
- In a bowl, add in the powdered sugar, orange juice and dash of salt. Whisk until smooth in consistency. Drizzle over the top of the cake.
- Slice and serve.
Carolina Biscuits
These delicious biscuits are sturdier than most biscuits that you can make. They will crumble with every bite and makes them perfect for practically any meal that you may make.
Makes: 12 servings
Total Prep Time: 30 minutes
Ingredients:
- 2 cups of all-purpose flour
- 4 tsp. of bakers style baking powder
- 1 tsp. of salt
- 1 cup of buttermilk
- cup of lard, chilled and extra if needed
Directions:
- Preheat the oven to 375 degrees.
- In a bowl, add in the all-purpose flour, dash of salt and baking powder. Stir well to mix. Add in the buttermilk and cup of the lard. Stir well until a soft dough begins to form.
- Divide the dough into 12 balls. Transfer onto a baking sheet.
- Place into the oven to bake for 20 minutes or until golden brown.
- Remove and cool for 5 minutes before serving.
Coconut Bread
This is a healthy pastry dish you can make whenever you are craving bread. It is gluten free and will be a bread dish that you will want to make as often as possible.
Makes: 8 servings
