Cooking time: 15 minutes Serving size: 12 Ingredients:

  • Bisquick mix 4 cups
  • Granulated sugar 1 tablespoon
  • Buttermilk 1 and 1/4 cups
  • For brushing the top, buttermilk 1 tablespoon
  • Butter, melted 2 tablespoons
Instructions: Preheat the oven to 425 degrees F. Take a bowl, add sugar and Bisquick mix. Stir it to combine. In the center, make the well and pour the buttermilk. Stir it until dry ingredients get moistened like the dough in rough form. Keep the dough on the floured surface.

Sprinkle the flour on the top of it. Make it in rectangular form, around inch to inch thick. Fold it in rectangle shape over in thirds. Turn this dough and pat it gently, in rectangle shape again. Cut the circle by using the biscuit cutter from the dough. Slowly re-roll scraps and make 12 biscuits.

You can also make your own shape or a square with the help of a sharp knife. Take the parmesan baking sheet, place these biscuits, and brush the top with buttermilk. Bake these biscuits at 425 degrees F for 15 to 20 minutes until they turn golden. Brush them with melted butter. You can store these biscuits through the leftover plastic wrap and store them for several days at room temperature or store it in the freezer in the zip-top or the airtight container.

  • Baking mix or Bisquick mix 1 and 1/2 cups
  • Milk 2/3 cup
  • Chopped pickled jalapenos 2 tablespoons
  • Egg 1
  • Shredded Monterey Jack cheese 3/4 cup
For making fiesta chicken
  • Olive oil 1 tablespoon
  • Skinless and boneless chicken breast 2 pieces (cut into small cubes)
  • Chopped medium onion 1
  • Garlic, minced 1 teaspoon (around 2 cloves)
  • Cumin 1 teaspoon
  • Chili powder 1 teaspoon
  • Diced tomatoes 14.5 ounces (1 can)
  • Black beans 14.5 ounces (1 can)
  • Chopped pickled jalapenos 2 tablespoons
  • Salt 1/2 teaspoon
  • Pepper 1/4 teaspoon
  • Fresh cilantro, chopped 1 tablespoon
  • Shredded Monterey Jack cheese 3/4 cup
  • Shredded cheddar cheese 3/4 cup
Optional topping:
  • Tomatoes, chopped
  • Green onion, chopped
  • Cilantro, chopped
  • Sour cream, as needed
Instructions: Preheat the oven to 400 degrees F. Take a medium bowl and whisk together the crust ingredients until it gets incorporated. Set it aside. Take a large iron skillet and heat olive oil on medium heat. Add chicken breast cubes and cook it for 4 to 5 minutes, until it gets to change its color. Add the chili powder, cumin, garlic, and onion, then cook it for more than 3 minutes until the onion gets soft.

Add the tomato diced, pickled jalapenos, black beans, then stir it. Season it with pepper and salt, if required. Stir it in with cilantro. Cook it for 2 minutes more. Spoon the mixed crust evenly on the chicken and top it with the Monterey Jack cheese and cheddar cheese. Keep it in the oven and cook it for 15 minutes until it gets golden.

Top it with green onion, tomato, and more cilantro. Serve it with sour cream and enjoy.
