Foreword
Welcome to our second Enjoy Life Foods recipe book. I cant say that when I started Enjoy Life Foods in 2001 I thought we would be publishing cookbooks. Yet here we are, nine years later, and due to our continued dedication in wanting to provide everyone with great tasting gluten-free and allergy-friendly products, we have been asked to lend our name to a second cookbook. We do so with great pride, and at the same time, with a tremendous amount of humbleness. We cannot thank you, our consumers, enough. Our customers have become our friends, and many of our 28,000 friends stay in touch with us on a regular basis.
We love reading the stories and testimonials from all of you, and we cant tell you how excited we are when you share how our products have changed and shaped your personal and familys lives. It is the greatest feeling in the world hearing these comments and it is the reason we continue to create new foods, and now great new recipe books, for all of you. We know the challenges that you face in trying to provide your family with safe, quality foods, which also taste great, and were happy to help you meet this challenge. Our first book, Cookies for Everyone!, featured 150 great-tasting, gluten-free and allergy-friendly treats from cookies and brownies to fruit bars and tartlets. This time around, we are excited to bring you recipes that will allow you to create elegant desserts, cupcakes and muffins, which all members of your family will enjoy. We think these recipes will satisfy every sweet tooth in the family while providing the yummy quality and meticulous detail to food safety that you deserve and expect from the bakers at Enjoy Life.
We are very proud of the fact that our mission has not changed over the years. We continue to strive in providing you delicious and safe foods made with natural and safe ingredients for your kitchens, your homes, and your familys lives. Introduction
Learning to enjoy life without the classic comfort foods as we knew them is one of the main reasons I wrote this book. Revamping the old favorites in an allergy-friendly wayand creating new oneswas rewarding but also a lot of fun. What would the new variation of the recipe look like? What would it taste like? How close to grandmas recipe would it be? Working as a food scientist for many years taught me that even though the results of a recipe might not be what I was aiming for, I could always learn something from them. How can you call them mistakes when you learn something from them? And after all, that is how brand new things sometimes get created! When you do get a great result from a new recipe, it feels like you have created a masterpiece! For example, I found it hard to believe that the chocolate cupcake could taste so good and be allergy friendly.
Ive been working in the food industry for some time now, over twenty-two years, and I have worked on a lot of food products. I do have to say that working with allergy-friendly products has been the most rewarding so far, which is another reason I wrote this book. I like sharing my experience of what I know so that others can be creative in baking and cooking for their families and friends. There are a lot of recipes in this book to choose fromfor every taste budfrom a chocolate cherry cupcake to crumb cake and everything in between. Also in this book is a section of icings and fillings, so you can be the chef. Mix and match for your own customized recipe.
Over the past few years while Ive been working for Enjoy Life Foods, I have met and spoken with many people who benefited from Enjoy Life products. Another reason I wrote this book was because of our customers and how Enjoy Life products have given them and their families products that everyone can enjoy. In this book you will find numerous recipes that call for Enjoy Life products, such as Enjoy Life Chocolate Chips, Granola, Snickerdoodle cookies, etc. Using these allergen-friendly ingredients makes it even easier to create great allergy-friendly baked goods! Enjoy these recipes as much as I had in making them. Be creative and have fun.

Enjoying Life with Food Allergies
Enjoying life with food allergies at first is overwhelming and adjusting to a special new way of eating is a challenge.
Fortunately, today we have ever-expanding resources in medicine and food companies to help with this journey. Enjoy Life Foods is one of those companies, making it possible through their food products and now with recipes to help you create your own favorites. Ive worked with food as a food scientist for over twenty-two years and have developed a lot of food products. Over time, I learned that product development is not just a science but an art. In allergy-friendly baking we have to use science and creativity to build a familiar recipe with allergen-free ingredients that may not be typical for that particular food but that do the same work as the old ingredients. At Enjoy Life, our products dont contain wheat/gluten, dairy, eggs, soy, fish, shellfish, peanuts, tree nuts, sulfites, or sesame.
