Whole foods: Eating real is the basis for this cookbook. That means no ingredient is overly processed or artificial in any way. Reduced-fat and other nutrient-modified foods are kept to a minimum. Theyre included only when they contain nothing artificial and when the dishs overall flavor appeal isnt adversely affected by their use.
Mediterranean-style approach: A Mediterranean diet seems to have beneficial effects for people with, or those who are at risk for, diabetes; it may slow diabetes progression! The consumption of plant foods overall is encouraged. Foods with good fats, such as extra-virgin olive oil, avocados, and nuts are celebrated, not shunned. Plus, all recipes in this book have zero grams of trans fat.
Rich ingredients: Butter and full-flavored regular cheeses, for instance, are used in just-right amounts when needed to make a dish more flavorful while still meeting healthful nutritional guidelines.
