Restaurant design is a field in which more latitude is allowed to the designer than is provided within the constraints of traditional architecture. Contemporary restaurant design reflects the tastes of ordinary people and builds on the aesthetic history of the particular country. In discussing contemporary restaurant design in Japan, it is necessary first to review the history of restaurants and their design in this country.

Restaurants in Japan date back to the end of the Muromachi era (1331-1598), when establishments called chaya, literally "tea shops," served pilgrims on their way to or from temples and shrines. These chaya were generally simple affairs, with benches set out for customers to enjoy tea and sweets or locally produced food.
