Weve written four vegan cookbooks over the last few years. This fifth cookbook, Super Fresh, has selected recipes from Fresh at Home, which was published in 2003. Across the street, I watch as our produce guys unload the days fruit and vegetable supply off the big truck into Fresh on Crawford Street. Deliveries continue to come and go. Familiar faces deliver the staples upon which the Fresh menus have been built. The natural foods purveyor brings pallets of productsalmond milk, tofu, buckets of dark maple syrup, quinoa, and 50-pound bags of basmati brown rice. Our van pulls up to drop off the sauces, soup, dressings, and mixes prepared overnight in our central kitchen. Our staff, the charismatic backbone of our operations, quietly arrives for work one at a time, on foot, bicycle, streetcar, or in the occasional taxi.
