N ot that long ago, plant-based eaters were found mostly on the fringe or margins of society. They were typically tolerated, but they were rarely appreciated. Most people considered plant-based diets to be just another dietary fad.
And a particularly annoying one, at that.
In 2015, a study looked at attitudes toward vegans and vegetarians compared with attitudes toward other groups of people who experience prejudice. The authors concluded that only drug addicts were evaluated more negatively than vegetarians and vegans.
But now, look at how fast things have changed!
In recent years, interest in plant-based eating has been skyrocketing. Now you can find plant-based milks in the dairy section of almost every supermarket and grocery store, often outselling the dairy options. And now you can find plant-based burgers at almost all the major restaurants and fast-food chains.
According to a report by the research firm Global-Data, in 2014, 1 percent of US consumers were vegan. But in 2017, only three years later, that number had risen to 6 percent. A 600 percent increase in veganism in the US in only three years would have been a stunning development if it had stopped there. But it didnt. In fact, the growing interest in plant-strong eating has only continued to increase and expand since then.
Its not a fad. Its not just another food craze. Scientific inquiry has produced a compelling, convincing, and coherent wave of studies demonstrating that plant-based eating leads to greater health and vitality, and to longer lives with far less disease and disability. Whole foods plant-based eating in particular leads to dramatically reduced rates of heart disease, diabetes, dementia, obesity, high blood pressure, and a host of other problems. Meanwhile, plant-based eating happens also to be a food path that leads to fewer greenhouse gas emissions, less damage to the life support systems of the planet, cleaner air and water, dramatically reduced health care costs, and far less cruelty to animals.
Theres a lot to like and a lot to love about that, which helps explain why plant-based eating has been growing so rapidly in recent years. And when the immensely popular food author Michael Pollan offered his dietary advice in seven pithy wordsEat food. Not too much. Mostly plantsthe numbers of people eating mostly plants, or only plants, jumped yet another notch. As more and more people have become vegans, more and more people have also been shifting from a meat- and dairy-heavy diet to a flexitarian one.
