Introduction The world and its perception around plants have changed dramatically since we started Two Raw Sisters. Everyone is a lot more open, knowledgeable and positive about plant-based food. From the moment Two Raw Sisters began, we have been known for our salads. We say salads because we really need to come up with another name for them. They arent your typical salads; most people think salads consist of iceberg lettuce, cucumber, tomato and feta if youre lucky.
The following 70-plus recipes are far from this. You can expect each and every Two Raw Sisters salad to be filled with delicious flavours, amazing textures and vibrant colours. Having learned from our own personal health struggles with chronic fatigue, endometriosis and being an underweight elite athlete, we believe in balance and, as our mum would say, everything in moderation. Yes, this cookbook is almost entirely plant-based. However, we welcome all eaters into our kitchen. Trying to find recipes for people with different dietary requirements shouldnt be stressful.
These recipes are all set to go for anyone and everyone, whether you or the people youre cooking for are gluten intolerant, dairy-free, plant-based, flexitarian, FODMAP or absolute meat lovers. So why create a whole cookbook on salad recipes? To us, salads are the starting point of every meal, whether its work lunches, throw-together midweek dinners or entertaining family and friends. Whether youre cooking for one, two, a family of four or a whole crowd of people, there is no better sight than a table filled with big platters layered up high with eye-catching colours and textures. As you make your way through this cookbook, we encourage you to plan your meals with plants top of mind. Rather than thinking of the meat element first, start with a delicious salad, then add the meat as a side. For most salads we have suggested good protein partners.
That being said, once you start thinking about plants first, youll become inspired and amazed by what you can do with them. It still blows our minds the numerous delicious dishes you can create with a range of simple ingredients, cooking techniques and flavour combinations. Salads are a perfect way to explore the world of wholefoods and seasonal produce. The more experimental you get, the more relaxed you will feel in the kitchen. So get creative and have fun. After all, making food brings us all together and creates delicious memories.

Elements of a Two Raw Sisters Salad Every Two Raw Sisters recipe starts with a core vegetable component. From here, the vegetable can be paired with another in-season vegetable or combined with your favourite grain, noodle or legume. Then its time to level it up with some key additions, such as a delicious dressing, toasted nuts or seeds, spices and/or vibrant fresh herbs. With these simple steps, vegetables come to life and you realise how truly delicious they can be. When it comes to cooking veges, we find that unless youre dealing with Asian greens, peas or edamame beans, steaming and boiling can be just a bit boring and dont tend to showcase a vegetables full potential. Our go-to cooking methods, which we use throughout this book, are roasting, chargrilling and pan-frying.
Making the most of a vegetable can be as simple as rubbing it in some oil and salt then cooking it in a hot pan for a few minutes, allowing it to slightly char and caramelise. When roasting vegetables we love to leave the skins on to maximise texture and nutritional value. Before putting your veges in the oven sprinkle over a spice or two of your choice, some oil, sea salt and maybe a can of chickpeas simple tricks like this can transform a meal, keeping everything interesting. The possibilities around what you can do in the kitchen with plants and vegetables are endless. Choosing ingredients We always try to cook seasonally and love going to our local fresh fruit and vege store to select the best fresh produce that is available. Seasonal produce always tastes much more delicious and is a lot more intense in flavour, which is important when we are making the vegetables the star of the meal.
