For my family and friends, with whom Ive had so many wonderful times at tables full of good food, wine, and cheer.
My idea of a good party is to gather a group of friends and enjoy some great food and wine together. Either for a casual evening or a big-deal cocktail party, I know that my guests will want something delicious to eat while theyre sipping and chatting. This may sound easier said than done, but Wine Time is here to help.
This book is a collection of recipes and ideas for preparing delectable treats for all kinds of get-togethers, from small, low-key affairs to big, festive bashes, and everything else in between. This is food that is fun to make, eat, and enjoy. Whether youre preparing bite-size snacks to nibble on, savory seafood or meat dishes to pair with a good bottle, or sumptuous platters of cheese and charcuterie, this book includes a number of dishes that will fit the bill for any type of gathering and complement all styles of wine.
A word here about wine: Almost all food goes well with wine. Even though there are so-called rules about pairing certain wines with certain foods, feel free to throw these out the window. What matters most is that you enjoy the wine you buy and drink. I recommend that you let your palate be your guide: Use my pairing suggestions as starting points, and then try a lot of different wines with various foods until you figure out what you like.
When shopping for wine, take full advantage of your wine merchants expertise. Most people are in the wine game because they are passionate about it and they enjoy recommending wines. Theyre willing to help you find the right wine for every occasion. The same goes for local farmers, butchers, fishmongers, cheesemongers, and gourmet shopkeepers. In my experience, they love to share their opinions, ideas, and knowledge about food, cooking, and ingredients, and I always take their advice to heart.
There is nothing better than the simple pleasure of eating good food and drinking wine with family and friends. But lets be honest: How pleasant is a plate of bread, cheese, and olives with a nice glass of red and a good book in hand? What a way to pass some quality alone time. Whether gathering a crowd or treating yourself, good food and a great glass of wine raise our spirits and enhance our lives, and Wine Time will make them even more festive, fun, and memorable.
OK, lets celebrate!
When your guests arrive, offer them a few simple but tasty snacks to nibble on while you get drinks together. Zesty finger foods, such as spicy nuts, marinated olives with feta cheese, and deviled eggs, can all be eaten in one or two delectable bites, with or without a wineglass in hand.
Its amazing how handy a few cans of chickpeas in the pantry can be. You can use them to make hummus or top salads, rice, and grains; plus, these versatile legumes make a great savory snack when roasted with olive oil, garlic, and a coating of Parmesan cheese. They pair well with a red Merlot or a white Chardonnay.
SERVES 8 TO 10
Two 151/2 oz [445 g] cans chickpeas, rinsed and drained
1/2 cup [15 g] freshly grated Parmesan cheese
3 Tbsp extra-virgin olive oil
1 tsp minced garlic
1/2 tsp paprika
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
Arrange the chickpeas on a baking sheet lined with paper towels and let them dry for about 30 minutes. Transfer to a large bowl.
Preheat the oven to 400F [200C].
In a medium bowl, stir together the Parmesan, 11/2 tablespoons of the oil, the garlic, paprika, and cayenne until well mixed. Pour over the chickpeas and toss well to coat.
Spread the chickpeas in a single layer on a rimmed baking sheet, drizzle with the remaining 11/2 tablespoons of oil, and season with salt and pepper. Bake for 20 minutes, stir, and continue to bake until the chickpeas are crisp and golden, about 5 minutes more.
Remove from the oven and transfer to paper towels to drain. Let cool completely. Taste and adjust the seasoning, if necessary, and serve.
MAKE AHEAD: The chickpeas can be made up to 4 hours in advance and can be stored in an airtight container at room temperature for up to 1 day.
Here is an easy recipe that combines cashews with olive oil, vinegar, honey, and a hint of cayenne pepper. Its a perfect crunchy cocktail snack. These nuts taste great with a glass of ros or a light, fruity red such as Pinot Noir or Grenache.
