At the age of nineteen, Kenny McGovernwas diagnosed with whats known as Social Anxiety Disorder and eventually became too ill to carry on working. As the years passed, he became almost housebound as a result of his illness and as such lost touch with many parts of life, which although enjoyable are often taken for granted. Simple pleasures such as buying a nice sandwich from a local caf or going out for a meal became impossible for him to do.As a result of this, and because of his love of food and cooking, he eventually took to trying to recreate many of his favourite shop-bought foods at his Glasgow home. If I cant go to McDonalds, Ill make my own, was his philosophy. Over a period of five years or more, he tested and tweaked many, many recipes, his new hobby quickly building into an obsession.In 2010 Kenny decided to publish some selected recipes in his first book, The Takeaway Secretit became an instant bestseller, following word-of-mouth recommendations on the Internet. Always use medium-size eggs and vegetables, unless stated otherwise. Herbs are fresh, unless stated otherwise.

When The Takeaway Secretwas published in 2010, it was the culmination of years of investigation into secret recipes and ingredients used by fast-food and takeaway chefs. I was delighted that my recipes had been published and was overwhelmed by the reaction of readers who enjoyed them. The support and encouragement Ive received, both in relation to my recipes and to my experiences with Social Anxiety Disorder, has been so positive, and Ill always be grateful that so many people took the time to get in touch. If youd like to discuss Social Anxiety Disorder, or just send me a picture of the pizza you made that night, Ill always be glad to hear from you.Some years on from the original publication of The Takeaway Secret, I hope that I can now offer even more insights into some of the secret recipes and cooking techniques used, as well as some new dishes such as King Prawn with Ginger & Spring Onion, or the famous Scottish Pizza Crunch. Should you try the recipes included in this revised book, I hope youll be glad to have done so.

Large chains offer menus based entirely around breakfast, lunch or dinner, as well as everything in between. Despite the ever-growing number of fast-food chains, however, the US also benefits from thousands of well-established mom-n-pop or family owned restaurants and cafs.Food is big business and the rivalry between the biggest brands is fierce. This can be excellent news for consumers, as the range of special menu items and new products offers more for the fast-food fan to experience. Of course, many people have their own favourite chains and so if your favourite restaurant does things a certain way, youll be able to apply those techniques when you make your own dishes at home.Thanks to the diverse cultures and peoples who make up the USA, fast food is reflective of a wide range of food history and so variety is the spice of life. From breakfast pancakes and muffins to burgers and fried chicken, making up your mind from a menu of American fast food can prove tricky indeed!
Egg Muffin (American Fast-food Style)
SERVES 11 English muffin, halved1 teaspoon butter, plus extra for greasing1 slice of processed cheese1 egg1Preheat the oven to its lowest setting.2Heat a dry frying pan over a medium heat. Toast the muffin halves cut-side down in the pan for around 30 seconds or until golden. Remove the pan from the heat.3Spread the toasted muffin halves with butter while they are still warm and place the processed cheese slice on the bottom half, then set aside.4Add a little oil to the pan and put it back on the heat. Using a greased egg ring, crack an egg into the pan and immediately burst the yoke with a knife. Cover the egg ring with a square of foil and cook on a low medium heat for 23 minutes or until the yolk is just beginning to set.5Remove the foil and the egg ring and flip the egg.
