TO MY LITTLE ROBINS NEST,THANKS FOR HELPING MELEARN TO FLYALL OVER AGAIN. Yall listen up now. If youre not already in love with Jennifers food, her welcoming smile and Southern charmwell then, bless your heart because Im here to tell you its time! Ive had the pleasure of knowing Jennifer for years, and loving her food for just as long! As a friend with experience writing cookbooks, I had the good fortune of talking with Jen as she worked busy as a cat on a hot tin roof pulling this book together.
But even knowing all that went into it along the way, I was blown away by the end result. After my own experiences running a blog and writing several cookbooks, I know first-hand how difficult it is to recreate recipes that people associate with memories, classics passed down generation after generation. Navigating social situations can be impossible without the right tools in your arsenal. Thats where Down South Paleo is such a gift! With these recipes, Jennifer has accomplished something I could nevereach recipe will bring back a flood of memories with its traditional Southern flavors and textures, without the gluten, dairy or processed junk. As I sat with Jennifer and her family, over a meal we both cooked entirely from Down South Paleo, her passion and love for her craft rang loud and true. She made this book for those of us who long for the classics we loved to eat before we had to find healthier alternatives.
She cooks from the heart, a place where only the best recipes are created. After trying out many of the recipes from this book, I can assure you that all of the recipes are not only fantastic, but also manage to be classic and traditional, as well as innovative in their approach to using healthier ingredients! If you want to prove to people that Paleo foods can be delicious as well as nutritious, and that no one needs to let go of their comfort food culture, then Down South Paleo is the cookbook youve been waiting for. For those of you with food intolerances beyond just gluten-free, Down South Paleo also offers something special you wont find in most Paleo cookbooks. With each recipe marked to reflect when it is free of the top allergens, youll know exactly if a recipe is for you at a quick glance. As someone with multiple food intolerances, including nightshades such as tomatoes and chilies, I was amazed that I was able to eat a full Mexican-inspired meal from Down South Paleo and still meet my dietary restrictions. Finding recipes that still deliver on flavor and texture when basic Paleo ingredients arent involved (such as nuts, eggs and nightshades) is quite a feat that says a lot about the superb quality of these well-tested recipes! I hope that you, too, will be reminded of loving, comforting memories with the foods you enjoy from Down South Paleo. I recommend curling up with a cup of Naturally Sweetened Sweet Tea and reading the entire book cover to cover.

Howdy, yall! I am Jennifer, founder of Predominantly Paleo, a hub for creative grain-free, dairy-free recipes made from whole foods! My goal in sharing my recipes is and has always been the same: make delicious food that anyone can enjoy, from kids to adults, including those eating a standard American diet. If youve read my blog, you know I am a Southern girl through and through with Texas roots that run as deep as the bluebonnets are plentiful. I am a fourth-generation Texan, and although I have lived all over the U.S. and abroad, my heart stays firmly planted back home. This book,
Down South Paleo, was written for all of you who take comfort and joy in mamas home cookin, no matter where you reside. It is filled with over 100 recipes nestled south of the Mason-Dixon line, including soul food, Tex-Mex, Cajun and creole, home cookin and Gulf seafood-inspired dishes.
What makes this different from other Southern cookbooks? All of the recipes are free of grains, dairy, refined sugars and overly processed ingredients. Aside from my love of Southern food, this book was born from a very personal story of suffering and illness. A few years ago, my health began to rapidly decline. What began with anxiety and mild malaise soon turned into a laundry list of diagnoses. Labels like Lyme disease, nutritional deficiencies, autoimmune thyroid disease, leaky gut, adrenal fatigue and chronic fatigue syndrome quickly decorated my medical files. After extensive doctors visits, lab tests and medications, both holistic and mainstream, I shifted my approach when my condition only worsened.
I began removing foods that might be causing inflammation and started adding in nutritious foods that were missing. As I did this, I started reclaiming my life, little by little, and witnessed debilitating symptoms lift slowly over time. I realized that there might be others like me and felt driven to share both my recipes and my story. Naturally, Ive always had a soft spot for my Southern folk, their genuine smiles and inviting warmth. They also make some outrageously tempting foods like chicken-fried steak, coconut custard pie, cornbread and fried okra. While delicious, these foods tend to be laden with rancid vegetable oils, refined white sugar, conventionally raised meats, and bleached wheat flour.
For those seeking a lifestyle with fewer inflammatory foods, those listed above are hard to come by, but often craved. My mission in writing Down South Paleo was to recreate all those Southern favorites and many more, but with high-quality cooking fats, grain-free alternatives and natural, less-refined sweeteners. Ive even reinvented Tex-Mex by replacing corn with yuca-based recipes. Youll find an entire chapter of these grain-free crispy treasures in the back of the book () and scattered throughout the chapters as well. I have poured my heart into writing these recipes so that you can experience a lil taste of home, only better! From my home to yours, happy noshing, yall!
