I wasnt always a trained chef. Before I went to culinary school, my skills in the kitchen were pretty unreliable, and my Sweet 16 birthday cake was the epitome of my amateur baking career at my uncles bakery. Since I insisted on baking it without any help, you can imagine what it turned out like I eye-balled all the measurements, made up amounts for things like baking powder and salt, and even decided to throw more butter in just because I thought it would make it better. Unfortunately, my unlimited passion wasnt very fruitful in the end. It was delicious, though, in its way.
Regardless of the kind of home cook you are, Im sure the free ebooks I will send out will excite you equally! Theyre full of recipes that have been developed and tested by pro cooks so that you never end up with less than perfect versions of delicious treats like my birthday cake. All you need to do is subscribe to my mailing list to get the ebooks sent to you right away, and you can start cooking. Good luck!

Introduction
Fudgy or cakey? Take your pick because the outcome of your brownies depends on it. Were kidding! Sort of. The truth is, it depends on your cooking time. Undercook them slightly and youll get lovely fudgy brownies. Bake them until theyre well done and youll get spongy, cake-like brownies with less moisture. To be honest, we dont mind one or the other when it comes to brownies. As long as theyre made right, well have them!
Thus, we recommend you keep an eye on your oven and the cooking times. If you prefer yours fudgy, remove them from the oven 2-3 minutes before the recipe calls for it. If you want them cakey, let them stay in the oven the entire time. Youre the boss! Even if we wanted to tell you what to do, its your kitchen and we also know the world is aggressively divided between fudgy and cakey brownie-lovers so we reckon you belong to one side or the other.
Aside from that, though, were ready to start baking! You will need measuring cups and a scale. Sorry! Baking IS a science. Fortunately, when it comes to brownies, its okay if youre missing a gram of flour but you'll still need to be as precise as possible with your weights. We dont care what your plans are for today, weve already preheated the oven and were baking some brownies whether youre here or not. We highly recommend you stick around, otherwise we dont promise therell be any leftovers. Good luck!
