500 Low-Carb Recipes: 500 Recipes, from Snacks to Dessert, That the Whole Family Will Love: summary, description and annotation

We offer to read an annotation, description, summary or preface (depends on what the author of the book "500 Low-Carb Recipes: 500 Recipes, from Snacks to Dessert, That the Whole Family Will Love" wrote himself). If you haven't found the necessary information about the book — write in the comments, we will try to find it.

Low-fat or low-carb? A recent New York Times Magazine (July 7, 2002) cover story answered this question and said that Dr. Atkins was right all along, its not fat that makes us fat but carbohydrates. Though the government has spent hundreds of millions of dollars in research trying to prove that fat is the cause of obesity, there has been a subtle shift in the scientific consensus over the past five years supporting what the low-carb diet doctors have been saying all along: if we eat less carbohydrates, we will lose weight and live longer.

One of the toughest challenges of any diet is having enough variety and choices to keep the dieter from losing interest. The most common reason that people abandon their diet is boredom but 500 LOW CARB RECIPES: 500 Recipes, From Snacks to Dessert, That the Whole Family Will Love by Dana Carpender has more than enough recipes to keep even the most finicky dieter on track.

With recipes for everything including hors doeuvres, snacks, breads, muffins, side dishes, entrees, cookies, cakes and much more, this is an endless supply for creating meals for the whole family night after night. Whether everyone in the family is on a diet or not, these recipes are proven winners with adults and kids alike.

Also included:

  • Many one-dish meals for single people--main dish salads, skillet suppers that include meat and vegetables, and hearty soups that are a full meal in a bowl.
  • Ideas for breaking out of old ways of looking at food with suggestions that save time and money and change what is considered a normal meal for breakfast, lunch and dinner.
  • Information about where to find low-carbohydrate specialty products and descriptions of low-carb specialty foods found in grocery stores everywhere.
  • An entire chapter that lists and describes low-carb substitute ingredients such as fats and oils, flour substitutes, liquids, seasonings and sweeteners.

Dieters will be pleased to know that they can eat foods like guacamole, omelets, pizza, steak, ham and dessert without giving up great taste and still lose weight. There are enough recipes to create the perfect menu for any holiday of the year--including Thanksgiving. Each of the 500 recipes includes a carbohydrate count to help calculate the total carb intake of each menu.

There are more recipes for main dishes and side dishes than most low-carb dieters will ever be able to eat--everything from down-home cooking to ethnic fare; from quick-and-easy weeknight meals to knock-their-socks off party food. 500 LOW CARB RECIPES is the last cookbook any dieter will ever need to buy and certain to be used until the binding is worn out!

Acknowledgments
There were a great number of people whose collective efforts have made this cookbook possible in what seemed like an impossibly short time: First, Id like to thank my husband, Eric Schmitz, who has been my unfailing right hand all through this project, grocery shopping, recipe testing, eating my failures without complaint, and accepting the strain on the food budget. He also helped me run the nutritional calculations for these recipes, which is about the only reason this book was done by its deadline. I quite literally couldnt have done it without him. Three cookbook authors have kindly allowed me to reprint recipes from their cookbooks. Theyre great books and great recipes, and you should buy them all. Those cookbooks and their authors are: Baking Low Carb and Bread and Breakfast: Baking Low Carb II, both by my pal Diana Lee.

The best place to get Dis books is through Amazon.com, but you can most likely order them through your local bookstore. These are the only books I know that are solely devoted to low-carb baking. Recipes reprinted with permission from Baking Low Carb, 1999, Diana Lee. Recipes reprinted with permission from Bread and Breakfast: Baking Low Carb II, 2001, Diana Lee. Splendid Low-Carbing, by Jennifer Eloff. Jen is the Splenda Queen, and since she lives in Canada, where Splendas been available far longer than in the United States, Jens had far more experience with it than I.

Jennifer sells her book herself through her Web site, sweety.com, and she has other books on cooking with Splenda, as well. Recipes reprinted with permission from Splendid Low-Carbing, 2001, Jennifer Eloff. Lo-Carb Cooking, by Debra Rowland, is the source, among other things, for recipes for cornbread and cheese popoversand there are many more great-sounding recipes in her book that I didnt have room for. Deb sells Lo-Carb Cooking herself; you can reach her at d_rowland3@hotmail.com. Recipes reprinted with permission from Lo-Carb Cooking, 2001, Debra Rowland. Also contributing greatly to this book is Vicki Cash, who allowed me to use the recipes from her 2002 Low Carb Success Calendar.

If Vicki puts out a calendar again, I strongly suggest you snap it up! Recipes reprinted with permission from The 2002 Low Carb Success Calendar, 2001, Just Ducky Productions. My Lowcarbezine! readers responded to my requests with piles of great low-carb recipes for this book. The ones whose recipes have been used are named with their recipes. I thank them, but I also thank those folks who sent recipes I didnt use. Quite often it was because we already had a similar recipe or because the carb count was judged to be just a bit too high; it was very rarely because we just didnt like a recipe. So whether your recipe is here or not, thank you, thank you, from the bottom of my heart.

And who knows? We may use your recipe in another book! I also thank all of you who have come up with ideas for recipes you wanted me to develop. My Lowcarbezine! readers are one of the genuine joys of my life. I was far too busy coming up with recipes of my own to test all of the recipes coming in from readers, so I recruited a crack troop of recipe testers. Again, I couldnt have done it without them. My recipe testers were Kim Carpender, Deborah Crites, Jane Duquette, Julie McIntosh, Ray Todd Stevens, Carol Vandiver, Maria Vander Vloedt, and Kay Winefordnernot to mention their families and friends. Thank you, one and all.

Finally, Id like to thank my mom, Jane Carpender, for letting me help her cook from the time I was tiny. Because of her, I knew how to measure accurately, separate an egg, bake cookies, make gravy, knead bread, rice potatoes, and perform dozens of other cooking tasks by the time I was 7 or 8 years old. If I know my way around a kitchen, its because of my mother. Thanks, Mom! All you parents out there, cook with your kids. Not only is it terrific quality time together and a great defense against junk food, but it also teaches kids skills that will serve them well for the rest of their lives.
