FOREWARD
When Bridget came to the Mission looking for volunteer hours in pursuit of her Physicians Assistant degree I gladly accepted her help, though I wasnt sure which direction her internship would take at the time.
When I found out that she was a skilled cook, personal trainer and had done extensive studies in well-balanced, healthy eating I immediately put her to work revamping the recipes we use in our daily soup kitchen.
During her time with us, she has made them easier to prepare, healthier, and more balanced nutritionally using common food items that we have had donated or that have been rescued from various sources.
And as the Executive Director of the Gospel Mission, I see humanity at both its best and worst giving me more than a thousand-and-one stories I could tell you.
So I have put a few of these stories between Bridgets recipes for your enjoyment.
All of these are original stories about the people we serve and the goings on around our Mission. In just about all cases the names have been changed.
Some of these stories will make you laugh. Some will make you cry and hit you on a very personal level.
I will be the first to tell you that I still dont know everything about how to run a Rescue Mission. But I do think that Gods hand is working through our Mission and we are making a difference.
We put this cookbook / storybook together in the hopes that the recipes will provide some healthy and very original meal ideas you can try and as a resource for other soup kitchen or large group cooking situations and that the stories will make you think about poverty, the homeless and offer a bit of inspiration on ways you can help.
Occasionally you may see me poke fun at a situation or person. Rest assured that no disrespect is meant and that sometimes I use humor to make tragic circumstances seem not quite so bad or to make a point.
We treat everyone who comes to our mission as family and with love.

INTRODUCTION
Dear community, family, and friends,
My goal in creating this recipe book is education, bringing home-cooked meals back into a busy lifestyle, and to bring to you healthified recipes that provide nourishment from the kitchen to your body and mind.
By creating healthier versions of recipes that are quick, easy to put together and tasty, I hope to enable our community, family, and friends to create an enjoyment of cooking in their own home.
Utilizing the substitutional guides, and seasonal produce chart included, meals can be cost effective with ingredients.
These recipes are modified to be whole-food based and free of most allergens to naturally give your body the nutrients every body needs for a functioning metabolism.
There are two versions of the recipes, one with quantities enough for forty people for use in a soup kitchen or other large group atmospheres and a second, family-size version which serves around five adults.
I have tried to make all of these recipes easy and simple to prepare, many allowing cooking in a slow-cooker or roaster overnight.
I hope you enjoy these recipes and I wish you a life full of life, love and great health!

ABOUT THE SILVER CITY GOSPEL MISSION

Feeding the hungry, sheltering the cold and giving hope to Silver City's hopeless
In 1986 the Silver City Gospel Mission began out of the basement of Silver City resident John Pershing. He had a vision to serve the homeless and others at, or near the poverty line in Silver City and in 1987 a board was formed and a non-profit 501-C(3) corporation was begun.
Today, the Silver City Gospel Mission is housed in a large facility located at 111 S. Texas Street in downtown Silver City, New Mexico.
Some of our services include a soup kitchen which serves hot, well-balanced meals daily, a thriving thrift store, a food pantry and clothing bank, a homeless shelter for men, women and children and a full-time staff.
The Gospel Mission is governed by a board of directors selected from the community-at-large; people who have demonstrated compassion and concern about the needs of the homeless and the indigent poor.
We are a non-denominational Christian charity that believes in the in-errancy of the Bible and that there is one God and that Jesus Christ is his only son.
Our Ultimate Goals
Our ultimate goals are to bring Jesus Christ to a starving world by love demonstrated through action and to give something back to our small town by helping our friends and neighbors.
We serve anyone who comes into our Mission, regardless of their race, color, national origin, sex, age, disability, religious beliefs, socio-economic status or sexual orientation.

1. Breakfast of Champions
Ariana and Rick help out at a large Christmas party for Sixth Street Elementary School.
In large bowl whisk eggs, milk, cinnamon and sugar together. Dip sliced bread on each side in egg batter and cook on top of buttered skillet cooking until light brown.
Heat grill and grill bacon until golden brown. Scramble all eggs in large bowl and salt and pepper to to taste. Place egg mixture on grill and cook until solid.
Combine vinegar and milk in separate bowl and let sit 5 min. In large bowl combine remaining ingredients mixing well, add soured milk and whisk until lumps are gone.
