Raw Amour is separated into two parts, Small Bites and Shared Bites.Small bites are fun, cute and easy recipes perfect for making for snacks at home,Christmas gifts or as nibbles for a party.
Shared bites are desserts that are perfect for any dinner party, birthday or dinnerparty that can be sliced up and shared with your loved ones.We urge you to be creative and add your own spark to these recipes. Adding some extra spice, herb, superfood, or sweetener make the recipe yours.Raw Food is about using ingredients nature has provided for us and turning it into

ABOUT OLIVIA
My raw journey has been what I can only describe as unimaginably rewarding and life changing. What started out as a way to detoxify my body, turned into an enlightening experience bringing not just energy, but peace, abundance, happiness and clarity.
Raw Food is a wonderful way to bring light back into our lives. Previously to finding rawfoods, I had fallen into the trap of a busy, fast, high stress lifestyle with late nights andearly mornings, that wasnt just damaging physically, but mentally and emotionallydraining.
I believe that eating living, enzyme rich, natural and unprocessed food is a form of selflove, a love that we deserve throughout our whole lives.
The Raw Kitchen began as a way of sharing this with other people, a form of educationand a platform for me to help inspire others about how Raw Food can change our lives.I believe that small steps at a time can bring such big change, also positively effectingothers around us.
After running The Raw Kitchen for 6 months I realised that there was so much demandfor sound advice and information about how to eat and prepare simple, nutritious & delicious food.
Raw Amour is an expression of this. Raw Amour is a way to help share with everyone that we can have our sweet treats that can be full of vitamins, minerals, antioxidants, enzymes and good energy. Without the nasties.
I hope that these recipes serve a place in your home, and your heart.

TIPS AND TRICKS
Sweetener Alternatives
In Raw Amour you will see that we use a variation of different of sweeteners.Depending on your preference, you may like to substitute to something that suits your taste or dietary needs. I find that if you are after a lower G.I option, rice malt syrup or stevia is great for this. Alternatively and cost effectively, dates are great as they also offer a beautiful richness to the dessert. Coconut sugar and nectar are great tasting, andI find you will need to add slightly more to your recipe to give it the same level as flavour as dates. Other options are yacon syrup, agave syrup, globe artichoke syrup or lucuma powder. We urge to do further research in what will work best for you.
Soaking your cashews
This is blender dependent and you will know your blender best, whether it is hardyenough to power through hard raw cashews, or if it needs some help by soaking the, for 4-8 hours before making a dessert. Ideally if you have time, soaking will always add richness and creaminess to a dessert.
Psyllium husk and Alternative setting agents
You will see that most of our desserts ask for psyllium husk. We love this as a settingagent as it comes with an abundance of nutritional benefits such as high soluble fibre.Alternatives to psyllium husk include Agar Agar, Irish Moss, Soy Lecithin and SunflowerLecithin, which can be used in our recipes also to give a variation of the flavour. It isbest do your further research into these.
Setting time
Usually, 8 hours is allowed for setting a raw dessert overnight. This lets the flavours release and lets the psyllium husk really absorb the moisture. Cakes and desserts can be left outof the fridge for up to 8 hours.
Storage
Refrigeration is recommended for all raw desserts. Most raw desserts left over can bestored in the freezer for up to 3 months and pulled out to defrost when desired. THERAW5
EQUIPMENTIn Raw Amour, most recipes call for a food processor, a blender, moulds or a dehydrator.Food processor for bases, balls and chunkier fillings.
Blender For smooth and creamy mixtures like cake fillings. We love to use a Blendtec blender.
Grinder - Turns any nut into a flour, handy in chunkier fillings, balls and cake pops.
Spring form cake tinAll recipes are based on a 22cm spring form pan, however youcould also use a 24cm and it will be a slightly shorter cake
Chocolate moulds Silicon is recommended, making it easier to peel away after chocolate has set in fridge or freezer.
Cupcake mouldsSilicon is recommended, making it easier to peel away after cupcake has set in fridge or freezer.
Dehydrator When a recipe calls for a dehydrator, you may use your oven on a lowheat as an alternative, being careful with temperatures. In Raw Amour all dehydrator recipes should be at the temperature generally between 50-70 degrees Celsius.
KITCHEN BASICSI find that having these pantry staples help to make most of these recipes a go-to when making raw desserts
Fruits Needed for a base flavour in most cakes for example limes, strawberries, blueberries, feijoa, mango, ginger, fig, avocado.
AlmondsThese are perfect for making a gritty or chunky base. Using a grinder you can turn almonds into a flour which is a beautiful addition to your filling or cake pop mixture.
CashewsSuch a great nut for making a creamy, velvety filling or thickening up a mixture.
Coconut OilCoconut oil helps to set raw dessert mixtures, also adding an element of creaminess and cheesecake consistency
Himalayan Sea Salt Important in balancing the flavours in sweet dishes especially chocolate, it adds the flavour X-Factor!
Raw Cacao PowderNot only do we love this for the health factor, this powder gives an amazingly earthy and full chocolate flavour that our body naturally loves.
