It is the same question adopted as the springboard for the UK Economic and Social Research Councils (ESRC) Research Programme on The Nations Diet (1992-1998), a wide ranging, multi-disciplinary set of co-ordinated basic research projects across the social sciences, including economics, psychology, social anthropology and sociology, as well as education and media studies.

Anne Murcott, Director of the ESRC Research Programme The Nations Diet, is MA in Social Anthropology and PhD in Sociology. She is the author of many articles in sociology on various aspects of health, and on diet and culture. She co-authored The Sociology of Food: Eating, Diet and Culture with Stephen Mennell and Anneke van Otterloo. From 1982 to 1987 she was the editor of Sociology of Health & Illness and from 1995 to 1997 a co-executive editor of Appetite. Having taught sociology, other social sciences and medical/health professional under- and postgraduates in the University of Wales (Cardiff) for more than 20 years, she now holds a research post as Professor of the Sociology of Health at South Bank University, London.
