There are so many important people to acknowledge and thank for their role in the development of this book that it is hard to know where to begin. First, I must thank my favorite registered dieticians, Katie Bishop, RD, Kristin Criscitelli, RD, and Valerie Henderson, RD. They were instrumental to this book by assisting me doing background research, and thinking through ideas and recipes. It is a pleasure to work with such talented women. I would also like to acknowledge the ongoing support and encouragement of my literary agent, Linda Konner, who I have come to view as my literary fairy godmother. It is wonderful to work for so many years, and hopefully many more to come, with someone who I know is always constantly forward thinking, and always with my best interests at heart.
