Valencias most famous speciality is its rice dishes, which include but are not limited to paellas. Theres an incredible variety; youll find them bursting with ingredients from turnips to snails to lobster. Locals are very particular about them, and will judge the quality of the socarratthe crust on the bottom like a vintage wine.

Tapas

Valencia has a thriving tapas culture, and the quality of these dishes is astonishingly high. Unlike in other parts of Spain, locals tend to sit down and order tapas dishes at tables, so many tapas bars have more of a restaurant feel than a bar ambience.

The Huerta

Valencia is surrounded by its huerta, a fertile agricultural floodplain filled with market gardens irrigated by a series of channels devised by the Moors. A source of great pride to Valencians, the huerta supplies the city with delightfully fresh produce, especially vegetables, citrus fruit and rice.
