I am immensely grateful to have had the opportunity to write this bookmy first cookbook. I feel overwhelmed with joy knowing that this dream has become a reality. From the time I was little, food has played an important role in my life. Growing up in a large Italian family, food was an integral part of every family gathering. My grandmother and grandfather (Mom-Mom and Pop-Pop) owned a luncheonette, and I have vivid memories of my time in their kitchen. Cutting potatoes for homemade french fries was one of my favorite jobs. As for my other grandmother, it was impossible to visit her without eating something. She wasnt setting the world on fire with her culinary skills, but she had mastered the staples. She made my grandfather the same chocolate chip cookies with walnuts and raisins, every single week for the 60 years they were together. If you ask my siblings and I about our favorite dish that she made when we were kids, we would unanimously agree on mashed potatoes or Grandmoms Soup, which was a very basic version of Italian wedding soup that we ate at the holidays! Simple and pure, that is how my grandmom cooked, and I still appreciate her cooking because food doesnt have to be fancy to taste good! Speaking of simple, my grandpopa butcher by tradehad such a simple spirit. My fondest memories of him have to be the way he savored his food, especially his homegrown tomatoes and the navel oranges he coveted during the winter months. Talk about tasting every bite! He was a man who understood how to be present and experience joy in even the most simple of situations. I try to emulate this ability, and I encourage you to do the same as you read through this book. My parents inherited this simple cooking style from my grandparents, and while I did not grow up eating gourmet meals, I am grateful for the fact that family dinners were a priority in my childhood home.
What sparked my interest in cooking and nutrition? Honestly, when I was a high school gymnast, I did not have the healthiest relationship with food. I began cooking for myself, often so that I could better control the food I was eating. Fortunately, after my gymnastics career ended, I ended up in culinary school and cooking positively transformed my relationship with food. Cooking became an emotional outlet for me and a way to express my loveboth for myself and for others. Now, in my nutrition and culinary services practice, I aim to inspire others to find comfort and joy in cooking as a way to redefine their relationship with food. I hope this book inspires you in the same way!
I truly believe that a healthy lifestyle is achievable and that good-for-you food can be approachable, delicious, and satisfying, and now I have the opportunity to share this reality with all of you!
