SLOW-COOK WITH CONFIDENCE
Follow these tips for slow-cooking success every time.
PREP NOW, COOK LATER
In most cases, you can prepare and load ingredients into the slow cooker insert beforehand and store it in the refrigerator overnight. But an insert can crack if exposed to rapid temperature changes. Let the insert sit out just long enough to reach room temperature before you place it in the slow cooker.
STICK WITH THAWED, NOT FROZEN
Although throwing frozen chicken breasts into the slow cooker may seem easy, its not a smart shortcut.
Foods thawing inside the slow cooker can create the ideal environment for bacteria to grow, so thaw frozen meat and veggies ahead of time. The exception is if youre using a prepackaged slow cooker meal kit and following the instructions as written.
LINE THE CROCK FOR EASE OF USE
Some recipes in this book call for a sling. Heres why:
A sling helps you lift layered foods, such as , out of the crock without much effort. To make, fold one or more pieces of heavy-duty foil into strips.
BROWN THE MEAT
Take a few extra minutes to brown your meat in a skillet before you place it in the slow cooker.
BROWN THE MEAT
Take a few extra minutes to brown your meat in a skillet before you place it in the slow cooker.
Doing so will add rich color and more flavor to the finished dish.
NO PEEKING!
Dont lift that lid! Its tempting to check on your meals progress, but resist the urge. Every time you open the lid, youll have to add about 30 minutes to the total cooking time.
ADJUST COOK TIME AS NEEDED
Live at a high altitude? Slow cooking will take longer. Add about 30 minutes for each hour of cooking the recipe calls for; legumes will take roughly twice as long.
