Eating to Thrive in the Modern Age: A Call to Action

Americans have a short memory when it comes to food. Not so long ago, we sourced all our food from neighboring farms and lovingly prepared wholesome and nutritious meals for ourselves and our families. Nowadays, most adults find themselves struggling to stay emotionally and physically healthy while managing busy careers, juggling families, and taking care of other responsibilities. Unfortunately, on the mental to-do list of the day, most adults place their personal health last. Instead of making time to shop for fresh produce, trying out new recipes, and spending time enjoying food with our community of family and friends, we oftentimes find ourselves racing out the door, grabbing a cup of coffee and a sugary snack, or bringing home take-out meals loaded with empty calories and very few nutrients. On any given day, we fall into bed and wonder to ourselves why were often sick or why we always feel exhausted. We fail to make the true connection: were not feeding ourselves well and our bodies are paying the price.

We often rush through each meal as if it were a chore, thinking of food merely as fast fuel, rarely enjoying the taste because we are always on the go. Furthermore, we are living at a time where it is easy to overeat, yet still be undernourished. Again and again, people eat high quantities of food with far too many empty calories and far too few nutrients. All of these factors are slowing down our metabolism and worsening our national health as rates of heart disease, cancer, and diabetes are all on the rise. The trusted so-called solutionsfad diets, prescriptions, expensive medical interventions that could be avoidedfurther add to the systemic problem, all while depleting our personal health, energy, and well-being. Taking all of this into account, it is easy to see that as a nation, we are gaining weight and taking years off our lives. This is a serious problem that we need to address NOW.
