Its a big burden to put on a little cookie, I know, but the memory of zweibacks combination of crunch and light sweetness came flooding back when I became a professional baker years later, and it stayed with me as I opened each Rosies Bakery, reminding me that there are few things in this world more deeply satisfying than a really good cookie.
