H ave you seen the movie Awakenings? It's based on a book by Oliver Sacks, who also wrote The Man Who Mistook His Wife for a Hat. Well, around our house, my husband is called the Man Who Mistook an Oyster for a Mushroom. In the early stages of working on my first book, Shakespeare's Kitchen, I asked my husband, Marc, to taste-test a variety of savory Elizabethan pies I was developing. When he claimed to like the mushroom one best, I knew that my beloved, accomplished in so many areas, had nonetheless a Neanderthal palate. Not one of the pies was a mushroom pie. Not one of them had even a hint of mushroom. No truffles, no truffle oil, nothing that had anything remotely to do with mushrooms. What he had actually liked best was the oyster pie. (Incidentally, none of the other taste-testers liked it, so oyster pie never made it into the book!)

From then on, I have depended on the kindness of strangers, enlisting friends, relatives, students, doormen, the wonderful staff at my all-time favorite bookstoreKitchen Arts and Letters, in New York Cityand, well, anyone who'd stand still long enough for me to pop something into his mouth. I'd like to acknowledge my gratitude to all those brave palates.

This chapter explores the foods and dining customs during that vibrant age and serves up a tasty menu created from ancient writings and archaeological finds. Many recipes come from the Roman On Cookery, thought to be the oldest surviving cookbook. Other recipes are taken from The Philosopher's Banquet, written by a Greek living in ancient Rome, detailing the foods and dining customs of Greece's golden age.

The ancients dined reclining on couches, and although they ate some admittedly strange things, like stuffed mice, roasted flamingo tongue, and grilled cow womb, they also enjoyed familiar favorites such as pizza, focaccia, and lasagna. There are many interesting taste combinations to rediscover from their time.

So, sit backor rather, lie backand dine like a Roman emperor while you watch your favorite epic and try some of these succulent dishes, which can be served meze-style, on shared platters, eaten with fingers, as was done in antiquity.
