From balancing a career and keeping up with kidsand their after-school activities and homeworkto hitting the gym, seeing family and friends, and managing all kinds of other obligations, its a wonder any of us has time to even think about dinner. On the busiest days, its too easy to overlook it entirely! Often, my days feel like a whirlwind. And yet, it is so important to me to find time to feed my family (and myself, of course) nutritious meals that are not just healthy, but also tasty.

Efficiency is key when it comes to weeknight dinners, and nothing is more streamlined than making a whole meal, start to finish, in a single pot. I wrote Skinnytaste One & Done to make cooking dinner a cinch, while maximizing both the health and flavor factors of your suppers. Each of the 140 recipes in these pages depends on a single cooking vessel, and the chapters are divided accordingly: Skillet ()yes, these are all in here! As are fresh salads, fish, lean meats, and lots of veggies. My skinny tweaks make comforting, indulgent foods fair game for anyone watching his or her eating. And every one of them has been field tested by my very own picky family! A winning recipe has to be approved by my young daughter, my adult daughter, and my husband, so you can be sure the vetting is comprehensive.

I love one-pot cooking for two big reasons: One, the cooking steps are few and simple; and two, there arent many dishes to clean! At the end of a long workday, few people have the bandwidth or patience to work through multiple tasks to finish a recipe. The less to do, the better! Plus, as much as I really enjoy cooking, I absolutely hate the cleanup, especially tackling dirty pots and pans. I develop and test recipes all day, most every day, for my Skinnytaste books and blog, then cook dinner on top of that, so those dishes stack up quickly. When it comes to weeknight meals, Im always looking for the easiest way to get dinner on the table without using everything in my kitchen cabinets and drawers. Quicker cleanup means more time for family orget ready for this crazy ideafor yourself. The less is more strategy of one-pot cooking means you can still end up with fantastic dinnerssuch as Southwestern Beef and Black Bean Soup ()with hardly any fuss at all.

There are seven types of cookware used in this book, ones that I use in my home on a nightly basis: a skillet, slow cooker, electric pressure cooker (I love my Instant Pot!), sheet pan, Dutch oven (or a big pot), grill pan or grill, and air fryer. Each has a purpose and a place in my kitchen, and I built the recipes in this book around their strengths. The skillet, sheet pan, Dutch oven, and grill need no introductionthese workhorses are probably already well loved in your own kitchen. Ive long been a big fan of pressure cookers, but my adoration reached a new level with the Instant Pot; I know Im not alone! Electric pressure cookers make quick work of tough cuts of meat and other long-cooking ingredients like dried beans, while concentrating their great for a more in-depth look at how to maximize each vessel or appliance and my tips for getting the best results.

Whether you love to cook or fear stepping into the kitchen, this book is for you! No dish requires difficult technical skills, nor do any call for hard-to-find ingredients. Though many of the recipes utilize my favorite appliancespressure cooker, slow cooker, air fryerfor a lot of those instances, Ive included notes on how to cook the dish using regular cookware. For example, if you dont own an air fryer, Ive provided instructions on how to bake the dish in the oven instead. The results may be slightly different, but youll still be able to get the most out of this book. Scattered throughout, youll also find Skinny Scoop sidebars where I share helpful tips, from how to work with certain ingredients and favorite products I recommend to how to store any leftovers. Ive also included information on the health benefits of various ingredients in Food Facts boxes, so you can up your game when it comes to food knowledge.

Each and every recipe includes nutrition information right on the page. I know from my own experience of trying to live healthfully that you really need to know whats in the food you eat to feel confident that youre putting good things into your body. So, Ive done this work for you! And, every dish has icons that indicate if it is quick (ready in 30 minutes or less), vegetarian, gluten-free, dairy-free, and freezer-friendly, so you can navigate the recipes with ease.

Skinnytaste One & Done grew out of my own experience of wanting easy weeknight dinner solutions, as well as hearing from so many fans of my blog and books that theres an endless need for super simple, really delicious meals that please an entire familyand are healthy! I hope that the one-pot-style recipes in this book truly fulfill that need and help make dinnertime easier and more enjoyable. Gathering around the dinner table is one of my favorite times of the day, and relieving the stress of getting a meal on that table is very important to me. With this book, you can spend less time thinking about, planning, and cooking supper, and enjoy more time with your loved ones instead!
