FOR DAVID AND MUZZY

Contents

A dog introduced me to Dustin, its true. You might think a cooking show or an evening of fine dining would have brought us together, but it was a Broadway performance of Annie. After the show, I went backstage with my family to meet the rescue dog that played the role of Sandy, and I also met Dustin. We immediately connected over our love of animals, people, and food (of course). It was as if wed been longtime pals reunited after years apart. Since that day, Ive loved watching Dustins influence in the food world grow.

Full disclosure: Im not vegan. However, I certainly do rely on a diet filled with whole, plant-based foods. Im a busy working mom, so most of my meals need to be easy to make, affordable, and nutritious. These recipes taste amazing and are so, so easy to make. If Dustin werent there to remind me that the food is vegan, Im not sure itd even occur to me. When he told me he was writing a book that would make his vegan fans feel right at home while also welcoming in the slews of folks who want to eat more plant-based diets, I knew hed nail it.

If you are a seasoned vegan, youll love Dustins creative take on well-loved favorites (try his . Nothing is overly fussy. Dustins experience cooking on the road has translated into an ability to create dishes that dont involve a lot of, well, dishes. Busy folks, rejoice! These recipes are accessible; doable, but never boring.

If you are new to veganism, or if youre simply looking to increase your intake of vegetables, Dustin is your perfect guide. Try his . As if the recipes werent enough, Dustin gives helpful background on essential ingredients, equipping readers with a useful working knowledge of them. Here Dustins recipes share much more than just a single dish. Readers get context and walk away from this cookbook with the confidence to play around in the kitchen and come out victorious. Dustin gives home cooks the courageand encouragementto step away from the recipes and try their hand at putting together a balanced, plant-based plate on any given weeknight.

Food is never just about fueling our bodies with calories and nutrients. Its about feeding our souls and connecting ourselves with each other and the world around us. In other words, it matters that Dustins recipes arent just foolproof, creative, and tasty, but that they are written with love and the desire to share his favorite meals with us. Making his recipes has me simultaneously missing Dustins presence around my table and feeling like a little bit of him is sitting in our dining room, squarely among my daughters, who all adore him and would beg to sit next to him. Happily, this book brings Dustin to all of our tables, including yours.

Fun and joythese are two words I hope you will keep in mind as you start to - photo 3

Funand joythese are two words I hope you will keep in mind as you start to explore the world of vegan cooking. Food is not meant to be intimidating; on the contrary, its meant to nourish our bodies and enlighten our senses. That doesnt sound so scary to me.

With this book, youll probably be trying foods youve never considered before and perhaps cooking things in a different style than you have in the past. You might also find that youve been cooking things all along that you didnt realize were vegan. Surprise! The joys of veganism include discovering that Oreo cookies are vegan, and that you dont need to buy a $400 blender to become a kitchen warrior in your own home.

When you start investigating vegan options, remember that this is your journey, not anyone elses! I applaud your curiosity by simply opening this book. Be mindful that in finding recipes and plant-based products you love, loving everything is not a given. Thats the way the eggless cookie crumblesvegan or not. But that doesnt mean meatless Monday isnt for you. It just means that meatless Monday wasnt for you. Dust yourself off, flip this book open, and let your finger land on whichever recipe the page falls open to. Thats your recipe for tonight. Thats simply vegan.

My sister has been saying for years, I wish I could go vegan but it all seems so hard. I dont know what all these ingredients are. If only I had you to cook for me every day. I wrote this book for her and the millions of people like herand most importantly, the person I was 10 years ago, when I decided to give eating vegan a go.
