Introduction

Gluten is a protein found in wheat and its purpose is to nourish the plant embryo during germination. Its composed of two different proteins, first of which is called gliadin and the second of which is called glutenin.

While it isnt necessarily bad for you, unless you have celiac disease, gluten rich foods are often calorie and carbohydrate heavy. This means that if youre trying to lose weight you should be avoiding food that is rich in gluten, such as white bread. However, thats harder said than done since gluten can be found in almost everything. Since gluten is often used to add thickness and flavor to different foods, you can find it in everything from soy sauce to salad dressing.

On the other hand, some people have an inability to process gluten, which is called celiac disease. Celiac disease can be so severe that it causes problems with infertility, gastrointestinal disturbances and other serious complications. For people that have celiac disease, their bodies recognize gluten as a harmful invader and begin to take on an immune response. This response is what ends up damaging the small intestine, which later causes gastrointestinal issues and nutritional deficiencies.

This book is written for those that are struggling with celiac disease and for those that are looking for recipes that can help them in their weight loss journey. Why should gluten stop you from eating some of the most delicious food available? My answer is, it shouldnt and thats the main reason why I wrote this book. Its so people who are struggling with celiac disease or are looking to lose weight can enjoy delicious desserts and treats. All of these recipes I have personally tried and enjoyed so I hope that you enjoy them as well. Please read all the ingredients and instructions carefully and, most importantly, enjoy the experience and the food!

Flourless Peanut Butter Cookies This recipe makes 1 dozen.

Ingredients

  • 1 cup of peanut butter.
  • 1 cup of white sugar .
  • 1 egg .

Directions

  1. Preheat the oven to 350 degrees F or 180 degrees C.
  2. Combine all the ingredients together.
  3. Drop them by the teaspoonful on the cookie sheet.
  4. Bake for 8 minutes.
  5. Let the cookies cool after youve made them.

Garbanzo Bean Chocolate Cake This recipe makes 1 nine inch round cake.

Ingredients

  • 1 cup of semisweet chocolate chips.
  • 1 (19 ounce) can of garbanzo beans, rinsed and drained.
  • 4 eggs.
  • cup of white sugar.
  • teaspoon of baking powder.
  • 1 tablespoon of confectioners sugar for dusting.

Directions

  1. Preheat the oven to 350 degrees F or 175 degrees C.
  2. Grease a 9 inch round cake pan.
  3. Place the chocolate chips into a microwave safe bowl and then cook in the microwave for about 2 minutes, stirring every 20 seconds after the first minute, until the chocolate is melted and smooth.
  4. Combine the beans and eggs in the bowl of a food processor.
  5. Process the mixture until its smooth.
  6. Add the sugar and baking powder, and pulse to blend it together.
  7. Pour in the melted chocolate and blend that until its smooth, scraping down the corners to make sure that the chocolate is completely mixed.
  8. Transfer the batter to the prepared cake pan.
  9. Bake for 40 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean.
  10. Cool it in the pan on a wire rack for about 10 to 15 minutes before inverting it onto a serving plate.
  11. Dust the cake with confectioners sugar before you serve it.

Flourless Chocolate Cake This recipe makes 1 ten inch round cake.

Ingredients

  • cup of water.
  • teaspoon of salt.
  • cup of white sugar.
  • 18 (1 ounce) squares of bittersweet chocolate.
  • 1 cup of unsalted butter.
  • 6 eggs.

Directions

  1. Preheat the oven to 300 degrees F or 150 degrees C.
  2. Grease the 10 inch round cake pan and set it aside.
  3. In a small saucepan over medium heat, combine the water, salt and sugar.
  4. Stir this mixture until its completely dissolved and set this aside.
  5. Either in the top half of a double boiler or in a microwave oven, melt the bittersweet chocolate.
  6. Pour the chocolate into a bowl of an electric mixer.
  7. Cut the butter into pieces and beat the butter into the chocolate, one piece at a time.
  8. Beat in the hot sugar water.
  9. Slowly beat in the eggs, one at a time.
  10. Pour the batter into the prepared pan.
  11. Have a pan larger than the cake pan ready, then put the cake pan in the larger pan and fill the pan with boiling water halfway up the sides of the cake pan.
  12. Bake the cake in the water bath at 300 degrees F or 150 degrees C for 45 minutes.
  13. The center will still look wet but let the cake chill overnight in the pan.
  14. To unmold, dip the bottom of the cake pan in hot water for 10 seconds and invert it onto a serving plate.

Black Bean Brownies This recipe makes 16 servings.

Ingredients

  • (15.5 ounce) can of black beans, rinsed and drained.
  • 3 eggs.
  • 3 tablespoons of vegetable oil.
  • cup of cocoa powder.
  • 1 pinch of salt.
  • 1 teaspoon of vanilla extract.
  • cup of white sugar.
  • 1 teaspoon of instant coffee.
  • cup of milk chocolate chips.

Directions

  1. Preheat the oven to 350 degrees F or 175 degrees C.
  2. Lightly grease an 8 x 8 square baking dish.
  3. Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender.
  4. Blend the mixture until its smooth and then pour it into the prepared baking dish.
  5. Sprinkle the chocolate chips over the top of the mixture.
  6. Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan. This should take about 30 minutes.

Buckeyes This recipe makes 5 dozen.

Ingredients

  • 1 cups of peanut butter.
  • 1 cup of butter, softened.
  • teaspoon of vanilla extract.
  • 6 cups of confectioners sugar.
  • 4 cups of semisweet chocolate chips.

Directions

  1. In a large bowl, mix together the peanut butter, butter, vanilla and confectioners sugar.
  2. Roll the dough into 1 inch balls and place them on a waxed paper-lined cookie sheet.
  3. Press a toothpick into the top of each ball. This is to be used later as the handle for dipping.
  4. Chill the balls in a freezer until theyre firm. This should take about 30 minutes.
  5. Melt the chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir it frequently until its smooth.
  6. Dip the frozen peanut butter balls in chocolate holding onto the toothpick.
  7. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes.
  8. Put them back on the cookie sheet and refrigerate until youre ready to serve them.


Creamy Rice Pudding This recipe makes 1, nine inch dish.

Ingredients

  • gallon of milk.
  • 1 cup of white sugar.
  • 1 cup of uncooked long grain white rice.
  • 3 eggs, lightly beaten.
  • cup of milk.
  • teaspoon of salt.
  • 2 teaspoons of vanilla extract.
  • Ground cinnamon for added taste.

Directions

  1. In a large saucepan over medium to low heat, combine the gallon of milk, sugar and rice.
  2. Simmer, covered for 1 hour while stirring frequently.
  3. Remove the pan from heat and let it rest for 10 minutes.
  4. In a small bowl, combine the eggs, cup of milk, salt and vanilla.
  5. Stir this into the rice mixture and return the pot to low heat, stirring constantly for 2 minutes.
