Preface

Rice (Oryza sativaL.) is one of the most consumed cereals in the world and is associated with food security. Considering the increasing demand for this cereal, breeding programs focus mainly on the development of higher yielding genotypes. However, consumers have expressed interest regarding the quality of rice. This scenario creates a new challenge for breeders by directing programs for high yield and quality grain.

Rice grain quality is determined by four attributes, cooking and eating quality, milling quality, appearance quality, and nutritional quality. Cooking and eating quality depends on the properties of starch (Chap.).

The accumulated knowledge can directly assist different breeding strategies, i.e., conventional breeding, transgenic mutation induction, and genome editing (Chaps.) helps the different breeding strategies.

Thus, this book is designed for people interested in the topic to have access to relevant information directly associated with rice grain quality. In this book, we sought to make a collection of topics related to the quality of rice grain. This was made possible by the availability and reliability of experts from different countries with experience in different aspects related to rice grain quality.
