acknowledgments
When one picks up a book, one sees an authors name on it and thinks of the author and book as singular. That is, thankfully, not the case. There are so many people behind this book, and for that I am truly grateful.
Im always at a loss for words to thank my husband. But really, he deserves all the special thank-yous in the world. I love you so much, Nick. You are the reason I am a mom, and for that I am forever grateful. I love our little family. Your constant, unwavering love and support never go unappreciated. I love that you know my five more minutes of work really means an hourat least. I love that you let me take over the dining room, rendering it unusable for anything except as a holding area for my millions of props and photography stuff when Im working on a big project. Youre the best sounding board, and I value your input so much. You always push me to go for my dreams. You make me so happy, and I love you more and more with each day that goes by.
Lynn, thank you for being the most loyal and caring friend a girl could ask for. I hope everyone gets to experience a friendship like ours in their lifetime. I love youyour quick wit and jokes make me laugh endlessly. I love that were both moms and get to share motherhood stories now!
I could not have done this book without your help, Bridget. You carted endless neutral shirts to our photoshoot days, and you have perfected the art of chopping vegetablesI will be forever grateful for your friendship! Thank you for being the best hand model and cheerleader always helping to get things done.
To my agent, Sally Ekus, thank you for getting it and me. I wrote my first cookbook without you, and Im secretly sad about that because having you in my corner is invaluable. You always push me to really think about an idea or proposal, and your urging me to take the weekend to think if I really wanted to work on this project changed my life. I begrudgingly bought a baby food maker thinking Id hate it. But oh, my goodness, it was one of the best purchases I have ever made; I use it daily to make food for my baby and our family. Thank you for always giving great feedback and steering me in the right direction.
To my editor, Donna Loffredo, you are a wordsmith, and your ideas are amazing. Thank you for shaping this book and steering me in the right direction. I feel as if I responded Yes, love this idea to every one of your notes, because you truly took my work to the next level.
Thank you to the best art director, Stephanie Huntwork. Your work is stunning, and I cannot wait to show off this beautiful book; its a true work of art because of you. Thank you for your comments and attention to the details.
To the entire team at Crown, thank you for turning this book into what it is. It has been such an amazing experience working with all of you.
To all my family and friends, thank you for your continuous support and encouragement. I love and appreciate you all.
Last, but certainly not least, I want to thank all of you for buying this cookbook! I hope your journey of making baby food is made easier as a result of it. Id like to stay in touchyou can find me at sweetphi.com, and I love seeing your creations using #sweetphiblog on social media.
the top 12 ways to use your baby food maker after baby food
Even though my baby is now over one year old (where does the time go?), I still use my baby food maker all the time. Its perfect for preparing things that use steamed fruit or veggies, and it saves so much time. Here are some of my favorite things to create with the baby food maker once youre done using it solely for baby food (also see Block Five: Beyond Baby for a few ways adults can cook with the baby food maker).
batter for pancakes with steamed vegetables or fruit
Sweet potato pancakes are easy to make with the baby food maker. Just steam sweet potatoes and use the following recipe:
sweet potato pancakes
makes 14 small pancakes
cup Sweet Potato Puree ()
2 large eggs, beaten
cup whole milk
1 teaspoon pure vanilla extract
1 cup whole-wheat flour
2 tablespoons sugar
1 teaspoon baking powder
teaspoon baking soda
teaspoon ground cinnamon
teaspoon ground nutmeg
In a medium bowl, stir together the sweet potato puree, eggs, milk, and vanilla. In a separate bowl, combine the whole-wheat flour, sugar, baking powder, baking soda, cinnamon, and nutmeg. Combine the dry and wet ingredients and stir until blended.
Heat a skillet or griddle, spray with cooking spray, and pour the batter to form pancakes; I like to use a 2-tablespoon cookie scoop to make equal-size pancakes. Flip halfway through cooking, about 3 minutes, or when bubbles start to form on the surface and the underside is starting to turn golden brown, and cook about 3 more minutes. Enjoy the pancakes with maple syrup, butter, and/or banana slices on top.
NOTE: You can make many other kinds of fruit or vegetable pancakes. Use the above recipe and swap the puree of your choice for sweet potatoes. For example, you can make savory broccoli pancakes, squash pancakes, or carrot pancakes, replacing the sugar with shredded Cheddar or Parmesan cheese.
small-batch marinara sauce
Use the baby food maker to make a small batch of marinara sauce. Follow the recipe for Tomato Sauce on .
veggies for unique meatball filling
Cooked sweet potato, ginger, carrot, or cauliflower pieces make great fillings for meatballs. Next time youre making a batch of meatballs, try mixing in some vegetables that have been cooked in your baby food maker, just like the Baby Meatballs with Carrots and Herbs ().
small-batch vegetable and cheese sauce
As much as I like those neon-yellow boxed mac n cheese packages, I prefer to eat a more balanced cheesy sauce, and I achieve that by mixing in vegetables. Carrots or butternut squash makes a great addition to cheese sauce because their orange colors make the sauce look extra cheesy. See the Secretly Carrot Cheddar Cheese Sauce on . I also make Alfredo Sauce with Cauliflower (following).
alfredo sauce with cauliflower
make 2 cups sauce
1 tablespoon unsalted butter
teaspoon garlic salt
cup grated Parmesan cheese
cup whole milk
cup plain full-fat yogurt
Prepare a batch of Cauliflower Puree () but before blending, add the butter, garlic salt, cheese, milk, and yogurt. Blend until smooth and enjoyits so good over pasta!
soups for lunches
Craving a cup of soup? With your baby food maker, single-serving soup is super easy and quick. Try the following recipes for a delicious soup:
