Overnight Crunch Coffee Cake
Leona Krivda Belle Vernon, PA Usually you wouldnt want your grandkids to have cake for breakfast. But once in awhile when theyre at Mommas house wont hurt...and with a glass of milk, its not all that bad, right? 2 c. all-purpose flour 1 t. baking soda 1-1/2 t. cinnamon, divided 1/2 t. salt 2/3 c. butter, softened 1 c. sugar 1 c. brown sugar, packed and divided 2 eggs 1 c. buttermilk 1/4 t. nutmeg 1/2 c. chopped walnuts In a bowl, whisk together flour, baking powder, baking soda, one teaspoon cinnamon and salt; set aside. chopped walnuts In a bowl, whisk together flour, baking powder, baking soda, one teaspoon cinnamon and salt; set aside.
In a separate large bowl, blend butter, sugar and 1/2 cup brown sugar until fluffy. Add eggs, one at a time, beating well after each. Add flour mixture to butter mixture alternately with buttermilk, beating well after each addition. Pour batter into a greased and floured 13"x9" baking pan. Combine remaining brown sugar, remaining cinnamon, nutmeg and nuts; sprinkle over batter. Cover with plastic wrap.
Refrigerate overnight. Uncover; bake at 350 degrees for 30 to 35 minutes. Serve warm. Makes 10 to 12 servings. Take time to enjoy a hearty family breakfast, just like Grandmas... warm biscuits with homemade jam, flapjacks with maple syrup, crisp bacon, sausage and farm-fresh eggs!

Its a keeper! 2 eggs 2 c. buttermilk 1/2 c. sour cream 2 t. baking soda 1 t. salt 1 c. all-purpose flour 1/2 c. old-fashioned oats, uncooked 1/3 c. sugar 3/4 t. baking powder Beat eggs in a large bowl. baking powder Beat eggs in a large bowl.
Add buttermilk, sour cream, baking soda and salt; beat well. Combine remaining ingredients in a separate bowl; mix well and stir into egg mixture. Drop batter by 1/4 to 1/2 cupfuls onto a griddle over medium heat. Turn over when bubbles appear around the edges; cook until golden. Serves 4.
