I just love Gooseberry Patch Christmas booksactually, I love all your cookbooks! Today I have Christmas Book 14 and Cozy Country Christmas in my bag here at work for some reading at lunch. Gooseberry Patch is soooo much fun, especially around the holidays. I just love all the little side notes, tips and pictures. The most delicious breakfast casserole that I have ever tastedeveryone who tries it agrees!

8-oz. tube refrigerated crescent rolls

1-1/2 lbs. ground pork breakfast sausage

2 T. butter

3/4 c. green pepper, diced

3/4 c. red pepper, diced

1/2 c. onion, diced

1-1/2 c. shredded Cheddar cheese

1-1/2 c. shredded mozzarella cheese

8 eggs

2/3 c. milk

salt and pepper to taste

Spray a 13"9" baking pan with non-stick vegetable spray. Add bread cubes to pan; set aside. Brown sausage in a skillet over medium heat; drain and cut into bite-size pieces. Add sausage to bread cubes; mix well. In a large bowl, beat eggs, milk, half-and-half, vanilla and spices until blended. Pour over bread mixture. Cover with plastic wrap; refrigerate overnight. Just before baking, combine remaining ingredients in a bowl; mix well and spoon evenly over casserole. Bake, uncovered, at 350 degrees for 40 minutes, or until bubbly and golden. Makes 8 servings.
