Mix bananas, shortening, eggs and vanilla in another mixing bowl; blend well. Add banana mixture to flour mixture; stir until just moistened. Pour into a greased 15"x10" jelly-roll pan; bake at 350 degrees for 20 minutes, or until center springs back when touched. Cut into bars. 
Use a pastry blender to slice or mash bananas to desired consistencyso quick & easy!
Back in 1984, we were next-door neighbors raising our families in the little town of Delaware, Ohio. We put together our first catalog at our kitchen tables, enlisting the help of our loved ones wherever we could. In 1992, we put together our very first cookbook, compiled from hundreds of these recipes and, the rest, as they say, is history. Hard to believe its been over 25 years since those kitchen-table days! From that original little Gooseberry Patch family, weve grown to include an amazing group of creative folks who love cooking, decorating and creating as much as we do. Today, were best known for our homestyle, family-friendly cookbooks, now recognized as national bestsellers.

Spread chicken with mayonnaise; coat with bread crumb mixture. Arrange on an aluminum foil-lined baking sheet; bake at 425 degrees for 20 minutes, or until juices run clear when chicken is pierced with a fork. 
Flatten chicken between wax paper using a rolling pin and a little musclejust toss the paper and theres no mess!
Spoon about 1/2 cup chicken mixture down the center of each tortilla; sprinkle each with 1/4 cup cheese and roll up. Place tortillas seam-side down in a greased 13"x9" baking pan. Spoon remaining chicken mixture evenly over top of tortillas. Sprinkle with remaining cheese. Bake at 350 degrees for 15 minutes, or until cheese is melted. 
To spice up familiar casserole recipes, use various cheeses like smoked hot pepper or Pepper Jack.
